Vegan Sun-Dried Tomato Pesto
Ingredients
- 2 cups fresh basil
- 8.5 oz jar sun-dried tomatoes packed in oil
- 3 cloves garlic
- 1/2 lemon juiced
- salt & pepper to taste
- red pepper flakes (optional) to taste
Instructions
- Combine all ingredients in a food processor.
- Blend on high until combined, scraping down the sides as needed.
- Taste and adjust seasoning as needed.

Wonderful recipe. Just in time to use some of my end of summer basil bounty! I lightened up on the oil, but just so that I could add some pistachios. Otherwise I followed your instructions and was pleasantly surprised. Can’t wait to try it with garden grown fingerling potatoes!
Do I add all of the oil from the sun dried tomatoes jar into it or leave that out?
Yep! This will keep you from having to add any additional oil.
I can no longer eat garlic which makes al ot of recipes difficult. I can safley digest garlic infused oil; could I put some of that in for the flavor?

Sure! Just throw it into a freezer-safe container.
