I think my love for spicy peanut sauce is well known at this point – I could eat that stuff every day. And chasing a 1 year old around has me craving filling lunches that pack in protein & veggies. These Vegan Peanut Chicken Wraps bring all of those things together. Each wrap has 38 grams of plant protein, tons of veggies and delicious charred vegan chicken. Everything can be prepped ahead of time for quick lunches or easy dinners. Great back to school dinner!

step 1: prep the peanut sauce

My love for this peanut sauce recipe is unwavering. It really hits all the notes for me.

It is slightly spicy (which can be adjusted to your liking), it is creamy and savory. It is the perfect sauce for so many things.

And the best part is that all you have to do is throw everything into a small blender or food processor and blend until smooth. It can be stored in the fridge if you want to make it ahead of time too!

step 2: make the filling

Once the sauce is done we can move onto the filling. Heat some oil and add the vegan chicken – it can be frozen or thawed. Cook until browned on both sides and then pour in the soyaki sauce.

Cook until the sauce creates a nice caramelization on the chicken. It is divine! Remove the chicken from the skillet and slice into strips.

Meanwhile, add the slaw, spinach, green onion & cilantro to a bowl. Pour over 1/2 of the peanut sauce and toss until combined.

step 3: assemble & serve

tips & tricks

The peanut sauce recipe will make more then you need for these wraps. Save the extra peanut sauce for more wraps or use in another recipe. It will keep in the fridge for 3-5 days.

I like Soyaki sauce over teriyaki sauce because I think it has a better flavor, but you can definitely use teriyaki sauce instead.

You could easily serve this as 4 servings and just have 1/2 a wrap for each person – my miso crunch salad would go great on the side! You could also use smaller wraps and make 4.

Ingredients

  • 1/2 cup peanut sauce separated
  • 1 tablespoon oil I used avocado oil
  • 8 ounces vegan chicken I used Daring
  • 2 tablespoons soyaki sauce see notes
  • 2 cups pre-made slaw
  • 2 cups spinach
  • 2 green onions chopped
  • 1/2 bunch cilantro chopped
  • 2 large wraps I used flour tortillas

Instructions
 

  • Prepare the peanut sauce and set aside – see notes.
  • Heat the oil in a skillet over medium heat. Add the vegan chicken and cook until charred on both sides (approx. 3 minutes per side). Pour in the soyaki sauce and toss until the sauce has caramelized – keep an eye on it so it doesn't burn. Remove the chicken from the skillet and slice into bite-sized pieces.
  • While the chicken is cooking, add all of the veggies to a large bowl and pour over half of the sauce. Toss until coated and set aside.
  • To assemble, add 1/2 of the veggie mix and 1/2 of the chicken to each wrap. Fold up, cut in half and enjoy. Serve the extra peanut sauce on the side for dipping.
