Cold Peanut Noodle Salad

This Cold Peanut Noodle Salad is loaded with crunchy veggies, tender soba noodles and the BEST peanut sauce you’ve ever had!

This Cold Peanut Noodle Salad is something I make ALLLLLL the time! Whenever I have friends over, it is my go-to. It is easy to make, can be made ahead of time, and my peanut sauce recipe cannot be beat! This is also great if you want to make it ahead of time for weekday lunches!
Step One: Make the Noodles
I have made this salad with all kinds of noodles – rice noodles, linguine, spaghetti. I pretty much use whatever I have on hand. But, if I have a choice, I always pick soba. I love them because they cook quickly, they taste great and they hold up well in this salad!
Bring a pot of water to a boil. Add the soba noodles and cook according to the package instructions. Drain and rinse with cold water.

Step Two: Make the Peanut Sauce
This peanut sauce is absolutely delicious. I’m telling you, you will want to eat this with a spoon! Or just dip a couple veggies in it while you’re prepping everything!

For the peanut sauce you’ll need:
- peanut butter
- low-sodium soy sauce – or tamari for GF
- sesame oil
- garlic
- fresh ginger
- jalapeño
- sriracha
Add everything to a food processor and blend until smooth. Taste and adjust the seasonings as needed. I personally like A LOT of spice!

Step Three: Assemble
When it comes to assembling there isn’t much too it. Throw everything in the biggest bowl you can find and toss, toss, toss.

I like to start by adding half of the peanut sauce and then add more to taste. Or, if you’re making this for meal prep, keep the sauce on the side and add it to each serving as you eat.
This salad is healthy, tasty and simple – it doesn’t get better than that!

- 8 ounces soba noodles dry
- peanut sauce
- 1/2 head green cabbage shredded
- 1/2 head purple cabbage shredded
- 2 large carrots peeled & julienned
- 1 bunch green onions diced
- 1 bunch cilantro diced
- 1 bell pepper julienned
- sesame seeds for serving

- Bring a pot of water to a boil. Add the soba noodles and cook according to the package instructions. Drain and rinse with cold water.
- Prepare the peanut sauce and set aside. Chop all of the veggies.
- Add the noodles, veggies and 1/2 of the peanut sauce to a VERY large bowl. Toss to combine. Add more peanut sauce to taste – or reserve to add to leftovers.

- If you’re making this for meal prep, I would leave the peanut sauce out completely and just add it to each serving before eating.
