Prepare the peanut sauce and set aside - see notes.
Heat the oil in a skillet over medium heat. Add the vegan chicken and cook until charred on both sides (approx. 3 minutes per side). Pour in the soyaki sauce and toss until the sauce has caramelized - keep an eye on it so it doesn't burn. Remove the chicken from the skillet and slice into bite-sized pieces.
While the chicken is cooking, add all of the veggies to a large bowl and pour over half of the sauce. Toss until coated and set aside.
To assemble, add 1/2 of the veggie mix and 1/2 of the chicken to each wrap. Fold up, cut in half and enjoy. Serve the extra peanut sauce on the side for dipping.
Notes
The peanut sauce recipe will make more then you need for these wraps. Save the extra peanut sauce for more wraps or use in another recipe. It will keep in the fridge for 3-5 days.
I like Soyaki sauce over teriyaki sauce because I think it has a better flavor, but you can definitely use teriyaki sauce instead.
You could easily serve this as 4 servings and just have 1/2 a wrap for each person - my miso crunch salad would go great on the side! You could also use smaller wraps and make 4.
