Get game day ready with these Soy Chorizo & Black Bean Nachos! These are the ultimate vegan nachos that everyone will love!

We are just a few days away from the Super Bowl and I have the ultimate game day snack for you – Soy Chorizo & Black Bean Nachos! These nachos are epic! They are layered high with beans, soyrizo and alllll of your favorite nacho toppings. Your friends and family won’t even notice there isn’t any cheese on these bad boys 😉
here’s what you need
ingredients
- tortilla chips
- black beans
- green chiles
- taco seasoning
- soy chorizo
- lime crema
- shredded lettuce, red onion, guacamole, salsa, jalapeño, cilantro – optional toppings
equipment
You need a small blender (or food processor) and a sheet pan!

steps
step 1: prep
So, instead of cheese being the glue for these nachos, we are using black beans instead. I know it sounds strange, but this technique really works!

Add the beans (including the canning liquid), some taco seasoning & green chiles to a small blender or food processor and blend until smooth.
And, since I couldn’t leave you without a sauce, we’re also making a lime crema. All you need is vegan mayo, vegan yogurt, jalapeño and lime juice. Blend until smooth and that’s it!

step 2: bake
To assemble, line a baking sheet with parchment paper and spread out the chips – I prefer to keep one even layer, rather than a tall stack, so that every chip has toppings.
Pour the beans over the chips and top with the soyrizo & remaining green chiles. Pop this in the oven and bake until everything is warmed through.

step 3: assemble & serve
Pull the nachos out of the oven and get to the toppings. This is my favorite part!

You can really use whatever you want, but I went with shredded lettuce, jalapeños, salsa, guacamole, red onion, cilantro and a healthy pour of that lime crema. I also like to have the leftover crema and extra salsa on the side for dipping.
These nachos are a must make for your next party!!

Ingredients
- 1 bag tortilla chips
- 1 15-ounce can black beans
- 1 4-ounce can green chiles separated
- 1 tablespoon taco seasoning
- 6 ounces soy chorizo crumbled
- lime crema optional, see notes
- shredded lettuce, red onion, guacamole, salsa, jalapeño, cilantro optional toppings
Equipment
- small blender or food processor
Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Add the beans (including the canning liquid), taco seasoning and 2 tablespoons of green chiles to a small blender or food processor. Blend until smooth.
- Spread the chips in an even layer on the baking sheet. Pour the beans over the chips and top with the soyrizo & remaining green chiles. Place in the oven for 10 minutes, or until everything is heated through.
- Remove from the oven and top with the lime crema and all of your favorite nacho toppings. Serve right away.

Notes
- To make the vegan lime crema: combine 1/2 cup vegan mayo, 1/4 cup vegan yogurt, juice from 2 limes and 1 jalapeño in a blender. Blend until smooth.

Such a delicious, easy meal! We aren’t vegan but try to eat meatless most of the week. We serve it with sautéed veggies (stove) or roast really small frozen broccoli (takes the same amount of time in the oven as the nachos)! My lazy hack is to use refried beans with the taco seasoning and add a bit of water instead of blending a can of black beans & green chiles.

This was really good! It was easy, and will be in my list to make again. I have to say I was a little skeptical of pouring a beans soupy mix on nachos, but intrigued and it was so worth it! No need for vegan cheese which I prefer to avoid. I did also love the lime crema on it! Thanks!
