Roasted Cauliflower with Maple Jalapeño Glaze
This Roasted Cauliflower with Maple Jalapeño Glaze is layered with hummus, crispy cauliflower, vegan feta, fresh herbs & sticky jalapeño sauce.
A cauliflower bowl is always a good choice – especially when a Maple Jalapeño Glaze is involved. This roasted cauliflower dish can be served as an appetizer, lunch or dinner. Just add some extra greens or serve it over rice to make it a complete meal. The cauliflower is crispy. The hummus is creamy. And the glaze adds so many extra layers of flavor.
How to Make Roasted Cauliflower
The roasted cauliflower really is the star of the show here. There is something so simple and so tasty about crispy cauliflower. And this cauliflower definitely isn’t lacking in the flavor department!
Chop a head of cauliflower into florets and toss them with oil, smoked paprika, chili powder, garlic powder, onion powder, salt & pepper.
Place the cauliflower on a baking sheet and roast for for 30 minutes – flipping after 20. The cauliflower should have a nice char on the edges!
How to Make Maple Jalapeño Glaze
This Maple Jalapeño Glaze is so special. It is slightly spicy, a little sweet. Might seem like a weird combo, but I promise you, it works!
Add maple syrup to a skillet with a jalapeño that has been sliced into rounds. Let the syrup come to a slight boil, then lower the hit and simmer for about 10 minutes. You want the jalapeños to be tender.
Just be careful to not let the syrup burn! This is very important – burnt syrup is no bueno!
Assemble it
When it comes to assembly, you want to work pretty quickly. This is best served when the cauliflower is fresh out of the oven!
Spread some pre-made hummus onto the bottom of a large plate or platter. Top it with the roasted cauliflower. Then, drizzle the Maple Jalapeño Glaze over everything. Add a sprinkle of crumbled vegan feta and finish it off with fresh dill.
This recipe has a little bit of everything – but it weirdly all works so well together! This would be great to serve at a party! Looks fancy, but takes minimal effort!

Roasted Cauliflower with Maple Jalapeño Glaze
Ingredients
FOR THE ROASTED CAULIFLOWER
- 1 head cauliflower cut in florets
- 2 tablespoons oil
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
FOR THE MAPLE JALAPENO GLAZE
- 1/3 cup maple syrup or agave
- 1 jalapeño sliced in rounds
FOR SERVING
- hummus
- vegan feta
- fresh dill

Instructions
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper. Add the cauliflower, oil and seasonings to the baking sheet and toss to combine. Place in the oven and bake for 20 minutes. Toss and cook for another 5-10 minutes, or until crispy.
- Meanwhile, add the maple syrup and jalapeño slices to a small skillet. Bring to a slight boil, lower the heat and simmer until the jalapeños are tender – being sure to stir often and not let the syrup burn. Remove from the heat and pour into a bowl to cool slightly.
- To serve, spread some hummus on a large plate and top with the cauliflower. Drizzle the jalapeño maple glaze over the cauliflower* and top with vegan feta and dill.
