Vegan Spinach & Feta Quesadillas

These Vegan Spinach & Feta Quesadillas are ready in 25 minutes & are filled with vegan feta, sun-dried tomatoes, shallots, cream cheese & spinach!
I can’t get enough of these vegan quesadillas! The filling is simple, but SOOOO tasty. There is the perfect amount of crunch, creaminess and saltiness. These make the perfect snack (if you want to share), or a meal (if you want it all to yourself).
How to Make Caramelized Shallots
One of the “fancy” aspects of these vegan quesadillas are the caramelized shallots. And by “fancy”, I mean they look/smell/tasty fancy…but the reality is that they’re super simple to make. They just take a little slow cooking on the stove.
Melt some vegan butter in a skillet and add the diced shallots. Let them cook, stirring frequently, and lowering the heat if they start to cook too fast. You want them to be tender, with a hint of a caramel color on the edges. Just make sure not to let them burn…keep stirring.
When the shallots are done, add in some chopped, fresh spinach. Toss until the spinach is wilted and set everything aside.
How to Assemble
The shallots are the most time-intensive part of this recipe. Once those are done, it is smooth sailing.
Grab an extra large flour tortilla – I’m talking BIG. To one half spread out a layer of vegan cream cheese and then top with crumbled vegan feta, chopped sun-dried tomatoes & half of the shallot/spinach mixture. Close it up and gently press the tortilla together.
Cook it & Serve
Melt some more vegan butter in a skillet – I’m telling you vegan butter is the way to go for these! Add one of the quesadillas to the skillet and cook it over medium heat until the bottom is crispy. Flip and do the same to the other side.
Remove the quesadilla from the skillet and repeat with the other quesadilla. Slice the vegan quesadillas up and serve hot.
I didn’t feel like these needed any dipping sauces, but I wouldn’t be mad about a little vegan pesto on the side!

Vegan Spinach & Feta Quesadillas
Ingredients
- 4 tablespoons vegan butter separarted
- 2 shallots diced
- 2 large handfuls spinach roughly chopped
- 2 large flour tortillas
- 4 ounces vegan cream cheese
- 4 ounces vegan feta crumbled
- 3 tablespoons sun-dried tomatoes chopped

- Melt 2 tablespoons vegan butter in a skillet over medium heat. Add the shallots and cook until super tender – approx. 10 minutes, stirring frequently. Add in the spinach and toss until wilted. Remove from the heat and set aside.
- On one half of a tortilla, spread 1/2 of the vegan cream cheese and top it with 1/2 of the vegan feta, sun-dried tomatoes & the spinach/shallot mixture. Fold the other half of the tortilla on top of the filling to close it. Gently press down to seal it shut. Repeat with the remaining ingredients to make another quesadilla.
- Melt 1 tablespoon of vegan butter in a large skillet over medium heat and add one of the quesadillas. Cook until crispy on both sides – approx. 2 minutes per side. Remove from the skillet, melt the remaining butter and repeat with the remaining quesadilla.
- Slice, serve and enjoy!
