These Mini Refried Bean Tacos are made with 4 ingredients and are ready in less than 30 minutes. You can make these for an easy dinner or a game day snack. Serve them up with your favorite salsas and hot sauces for a tasty and easy vegan taco night!

Step One: Prep the Beans

Every time I post a recipe with refried beans I get bombarded with comments about them not being vegan-friendly. But, from my perspective, it is incredibly easy to find vegan refried beans. Just check the label, and make sure there isn’t any lard in there.

To prep the filling, add a can of refried beans, taco seasoning and a couple tablespoons of water to a bowl – the water will help loosen up the beans. Mix until combined.

Step Two: Make the Tacos

For the tortillas, I used street-style flour tortillas. Street-style tortillas are smaller than normal taco tortillas. You should be able to find them at just about any grocery store!

Spread a couple tablespoons of beans on one half of a tortilla. Fold the tortilla in half to close it up – the beans will keep it closed while cooking. Place on a lined baking sheet and repeat with the remaining ingredients.

Spray with oil and place in the oven for 8 minutes. Flip and cook for another 8-10 minutes, or until the tacos are crispy.

Step Three: Serve

Plate the tacos and get all of your toppings ready. You can really go crazy when it comes to the toppings! Grab all of your favorite salsas, avocado or guac, hot sauce, cilantro, lime wedges…just go for it.

These tacos are best served right away, but they reheat really well. I like to pop mine in the air fryer for about 5 minutes, but you could use the oven or a skillet as well.

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Add the beans, taco seasoning and a couple tablespoons of water to a bowl – the water will help loosen up the beans. Mix until combined.
  • Spread a couple tablespoons of beans on one half of a tortilla. Fold the tortilla in half to close it up – the beans will keep it closed while cooking. Place on the baking sheet and repeat with the remaining ingredients.

Notes

  • Be sure to check the label of the beans you buy to ensure they are vegan-friendly. I really like the fat-free refried beans from Trader Joe’s!
  • I used street-style flour tortillas, but you can also use corn.
