Instructions
Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
Add the beans, taco seasoning and a couple tablespoons of water to a bowl - the water will help loosen up the beans. Mix until combined.
Spread a couple tablespoons of beans on one half of a tortilla. Fold the tortilla in half to close it up - the beans will keep it closed while cooking. Place on the baking sheet and repeat with the remaining ingredients.
Spray with oil and place in the oven for 8 minutes. Flip and cook for another 8-10 minutes, or until the tacos are crispy. Remove from the oven and serve with the optional toppings.

Be sure to check the label of the beans you buy to ensure they are vegan-friendly. I really like the fat-free refried beans from Trader Joe's!
I used street-style flour tortillas, but you can also use corn.
