Soyaki Lentils & Broccolini

This Soyaki Lentils & Broccolini recipe is a great vegan weeknight dinner! Requires just a few ingredients and 20 minutes to make!

A 20-minute dinner that is protein & veggie packed?! Sign me up please! This Soyaki Lentils & Broccolini recipe is sure to be one of your new favorites. It requires just a handful of ingredients and one pot. Doesn’t get much better than that. Serve it over rice for a quick and easy plant-based dinner!
Step One: Prep the Ingredients
To make this recipe in 20 minutes, I recommend prepping all of the ingredients ahead of time. Here is what you need:
- sesame oil
- yellow onion
- green onions
- garlic
- serrano pepper
- broccolini
- ginger powder
- cooked lentils – I get these in the refrigerator section, near the produce
- soyaki sauce – I get this at Trader Joe’s, but you can also sub teriyaki sauce
- cooked rice
- sesame seeds

Step Two: Cook the Veggies/Lentils
Since everything for this recipe is cooked in one pan, you will want to start with the veggies. You want to get them tender – with a little bit of crunch.

Heat some sesame oil in a skillet over medium heat. Add diced yellow onion, whites of green onions, garlic, serrano, broccolini and ginger powder. Cook down, stirring frequently, for 5 minutes.
Pour in the cooked lentils and soyaki sauce. Cook for another 5 minutes, or until the lentils are heated through and the veggies have absorbed some of the sauce.

Step Three: Serve
And that is it! The veggies should be tender-crisp & the lentils should be saucy. Be sure to give everything a taste before serving it up. You could always add more soyaki or cook the veggies a little longer.

To serve, add rice to each bowl and top with the lentils/veggies, remaining green onions and sesame seeds.
This is a great weeknight dinner and the leftovers reheat great for a next day lunch!

Ingredients
- 1 tablespoon sesame oil
- 1 small yellow onion sliced
- 3 green onions diced, whites & greens separated
- 3 cloves garlic minced
- 1 serrano pepper sliced, optional
- 8 ounces broccolini cut in 2" pieces
- 1/2 teaspoon ginger powder
- 2.5 cups cooked lentils I used brown lentils
- 1/3 cup soyaki sauce or sub teriyaki sauce
- 2 cups cooked rice for serving
- sesame seeds optional, for serving
