Chickpea Caesar Salad Sandwiches

These Chickpea Caesar Salad Sandwiches are made with mashed chickpeas, vegan caesar dressing and romaine on toasted ciabatta! Perfect on-the-go meal!
Hot weather and cold sandwiches go hand in hand. And these Chickpea Caesar Salad Sandwiches are my new favorite. Toasted bread topped with smashed chickpeas in a dairy free caesar salad. Crunchy, creamy and super delicious!
Step One: Make the Vegan Caesar Dressing
For the vegan caesar dressing you are going to need:
- vegan mayo
- capers
- caper brine
- lemon juice
- dijon mustard
- dried parsley
- pepper
- garlic
- salt
Add everything to a large salad bowl and crush the capers with a fork. This dressing is really made to taste – so be sure to taste as you go and adjust the measurements to your liking.
Step Two: Assemble the Filling
Once the dressing is ready, add a can of drained and rinsed chickpeas. Grab that fork again and mash away. You can leave some of the chickpeas intact if you want.
Add in a head of chopped romaine and some red onion. These will add a nice crunch! Toss, toss, toss until everything is perfectly coated.
To make these sandwiches even easier, you can add all of the dressing ingredients to a food processor and blend until smooth. Add the drained chickpeas and pulse until everything is combined. Transfer to a bowl and add the onion and romaine.
Step Three: Make the Sandwiches
When choosing a bread for these sandwiches, I would go with something hearty. This will keep the bread from getting soggy.
I went with everything ciabatta buns from Trader Joe’s – they are so delicious! But you could also use focaccia or a baguette. Just be sure to toast the bread!
Add a large helping of the caesar salad to each sandwich. Slice in half and serve! These sandwiches are great on-the-go and are the perfect lunch idea.

Ingredients
FOR THE VEGAN CAESAR DRESSING
- 1/2 cup vegan mayo
- 1 teaspoon capers
- 1-2 teaspoons caper brine
- 2 tablespoons lemon juice
- 1-2 teaspoons dijon mustard
- 1/2 teaspoon dried parsley
- 1-2 cloves garlic grated
- 1/2 teaspoon pepper
- salt to taste
Instructions
- Add all of the dressing ingredients to a large bowl. Mash the capers with a fork, stir and adjust seasonings as needed.
- Add the chickpeas and mash with a fork until the desired consistency is reached. Add the onion & romaine and toss to combine.
- Toast the bread. Add some of the caesar salad to each roll and enjoy.
