Ingredients

FOR THE VEGAN CAESAR DRESSING

FOR THE SANDWICHES

  • 1 15-ounce can chickpeas drained and rinsed
  • 1/4 red onion diced
  • 1 head romaine chopped
  • 4 sandwich rolls

Instructions

  • Add all of the dressing ingredients to a large bowl. Mash the capers with a fork, stir and adjust seasonings as needed.
  • Add the chickpeas and mash with a fork until the desired consistency is reached. Add the onion & romaine and toss to combine.
  • Toast the bread. Add some of the caesar salad to each roll and enjoy.

Notes

  • To make this even easier, add all of the dressing ingredients to a food processor and blend until smooth. Add the drained chickpeas and pulse until everything is combined. Transfer to a bowl and add the onion and romaine.
