We are going to be making this Vegan Feta & Chickpea Pasta Salad all spring/summer long at my house. It is so easy to make, has the best flavors and is a crowd pleaser! This is the perfect dairy-free pasta salad to make for your next party or picnic!

here’s what you need

ingredients

  • pasta shells – or sub another short pasta
  • chickpeas
  • sun-dried tomatoes
  • red onion
  • vegan feta – I used Follow Your Heart
  • garlic
  • parsley
  • fresh mint
  • oil – I used avocado oil
  • apple cider vinegar
  • lemon juice
  • dijon mustard
  • salt & pepper

You just need a pot to cook the pasta and a large mixing bowl!

steps

step 1: cook the pasta & make the dressing

Start by boiling a pot of water and cooking the pasta according to the package instructions – the amount of time will just depend on what pasta you use. I used shells, but any short pasta will work!

The dressing is a simple combo of oil, vinegar, lemon juice, dijon mustard, salt & pepper. Just add everything to a bowl and whisk!

step 2: assemble & serve

The rest of the recipe is just chopping a few veggies and assembling.

So, once everything is ready, add it all to a large mixing bowl. Pour over the dressing and mix until everything is combined.

Give it a taste and adjust the seasonings as needed. You can serve this right away or let it chill in the fridge!

tips & tricks

This is meant to have a tangy dressing. If you prefer less tang, start off by adding less vinegar & lemon juice to the dressing – you can always add more later.

If you have the time to let it chill, that would be my recommendation, but it also tastes really great at room temp.

Ingredients

  • 8 ounces pasta shells or sub another short pasta
  • 1 15-ounce can chickpeas drained & rinsed
  • 1/4 cup sun-dried tomatoes roughly chopped
  • 1/2 red onion finely chopped
  • 1/3 cup vegan feta I used Follow Your Heart
  • 2-3 cloves garlic minced
  • 1/2 bunch parsley chopped
  • 2 tablespoons fresh mint chopped

FOR THE DRESSING

  • Bring a pot of water to a boil and cook the pasta according to the package instructions. Drain & rinse with cold water.
  • Meanwhile, add the dressing ingredients to a bowl and whisk. Set aside.
  • To assemble, add the pasta, chickpeas, tomatoes, onion, feta, garlic, parsley & mint to a bowl. Drizzle over the dressing and toss to combine. Taste and adjust the seasonings as needed.
  • Cover and chill in the fridge or serve right away.
