Super Yummy Lentil Salad

This Super Yummy Lentil Salad is ready in 15 minutes! Packed with veggies, protein and the perfect lemon garlic vinaigrette!

I love lentils! They are super versatile and can take on any flavor. I especially love that I can find them pre-made in the produce section! Cooking lentils isn’t hard, but it sure makes a recipe like this Super Yummy Lentil Salad a whole lot faster to make when they are already cooked for you! 15 minutes is all it takes to make this salad. Toss together the lentils, crunchy veggies and lemon garlic vinaigrette. And now, you have the tastiest salad!
Step One: Make the Dressing
I am in love with this lemon garlic vinaigrette! It is light and tangy. It adds the perfect zing to this salad!

For the dressing, you will need:
- avocado oil – or sub olive oil
- garlic – lots of it
- whole grain mustard
- lemon juice
- salt & pepper
Add everything to a bowl and whisk until combined. Play around with the lemon juice, salt & pepper until you love it!

Step Two: Prep the Salad Ingredients
Once the dressing is prepped, we can get to chopping. Here is what I used:
- red bell pepper – any color works though!
- red onion
- jalapeƱo – omit this if you don’t like spice
- flat leaf parsley
- fresh basil
I like to give everything a uniform cut. I think it looks better and it makes the salad easier to eat. So take your time while you’re chopping everything.

Step Three: Assemble & Serve
And now it is time to assemble. Add the lentils, veggies & herbs to a large bowl. Pour over the dressing and toss until everything is combined.

You can serve this right away or you can pop it in the fridge to chill. I’ve eaten this both ways and they are both equally as delicious!
The leftovers also make a great next day lunch! Serve it with some naan or pita for dipping!


Tips & Tricks
I get my cooked lentils in the refrigerator/produce section. If cooking the lentils from scratch, allow them to cool before adding to the salad.
Omit the jalapeƱo if you’re sensitive to spice.
Serve with naan or pita on the side for scooping!

Ingredients
FOR THE SALAD
- 2 1/2 cups cooked lentils
- 1 red bell pepper diced
- 1 small red onion diced
- 1 jalapeƱo diced, optional
- 1/2 bunch flat leaf parsley finely minced
- 2 tablespoons fresh basil finely minced
FOR THE DRESSING
- 1/3 cup avocado oil or sub olive oil
- 2-3 cloves garlic finely minced
- 1 tablespoon whole grain mustard
- 1 lemon juiced
- salt & pepper to taste
Instructions
- Combine all of the dressing ingredients in a bowl and whisk to combine. Set aside.
- Add all of the salad ingredients to a large bowl. Pour the dressing over the salad and toss to combine. Taste and adjust the seasonings as needed.
- Eat as is or cover and chill in the fridge until ready to serve.
