Ingredients

  • 8 ounces pasta shells or sub another short pasta
  • 1 15-ounce can chickpeas drained & rinsed
  • 1/4 cup sun-dried tomatoes roughly chopped
  • 1/2 red onion finely chopped
  • 1/3 cup vegan feta I used Follow Your Heart
  • 2-3 cloves garlic minced
  • 1/2 bunch parsley chopped
  • 2 tablespoons fresh mint chopped

FOR THE DRESSING

Instructions

  • Bring a pot of water to a boil and cook the pasta according to the package instructions. Drain & rinse with cold water.
  • Meanwhile, add the dressing ingredients to a bowl and whisk. Set aside.
  • To assemble, add the pasta, chickpeas, tomatoes, onion, feta, garlic, parsley & mint to a bowl. Drizzle over the dressing and toss to combine. Taste and adjust the seasonings as needed.
  • Cover and chill in the fridge or serve right away.

Notes

  • This is meant to have a tangy dressing. If you prefer less tang, start off by adding less vinegar & lemon juice to the dressing - you can always add more later.
  • If you have the time to let it chill, that would be my recommendation, but it also tastes really great at room temp.
