This Vegan Feta & Tomato Pizza is perfect for the end of summer! The roasted tomatoes are tender and juicy. The vegan feta has the perfect amount of creaminess and tang. And a thin layer of spicy chili paste adds a little heat. Served with plenty of fresh basil and vegan parmesan, this is a must try!

Step One: Prep the Dough & Veggies

The key to a great pizza (when using pre-made dough) is letting it come to room temperature before stretching it out. Add a little oil to a clean surface, and let the dough sit for at least 30 minutes.

While the dough is resting, we are going to roast the veggies. Add cherry tomatoes, shallots, garlic, Italian seasoning, olive oil and a pinch of salt & pepper to a baking dish. Toss to coat evenly and place in the oven for 20 minutes, or until the tomatoes burst.

Remove from the oven and separate the veggies from the oil – you can use the oil for serving.

Step Two: Assemble

Now that the tomatoes are tender and the dough is at room temperature, it is time to assemble the vegan pizza.

Spread out the dough on a greased baking sheet. Spread out an even layer of Calabrian chili paste on the dough – I get this at Trader Joe’s. Top with 1/2 of the tomatoes/shallots and then crumble on some vegan feta. Add the rest of the tomatoes and sprinkle with vegan parmesan. Place in the oven for 15 minutes – the crust should be browned and the cheese should be melted.

Step Three: Serve

Pull the pizza out of the oven, slice it up and top with lots of fresh basil. I also like to add a little more vegan parmesan & some red pepper flakes. You can serve that reserved tomato oil on the side for drizzling, and you are ready to dig in.

The dough should be nice and crispy on the bottom and the tomatoes & cheese should be soft and tender. This vegan pizza has the perfect amount of spice, crunch and creaminess. You’re gonna love it!

Ingredients

  • 16 ounces pre-made pizza dough
  • 16 ounces cherry tomatoes
  • 1 shallot sliced
  • 3 cloves garlic roughly chopped
  • 1 teaspoon Italian seasoning
  • 1/4 cup olive oil plus more for the dough
  • salt & pepper to taste
  • Calabrian chili paste optional, to taste
  • 4 ounces vegan feta crumbled
  • vegan parmesan to taste
  • fresh basil, red pepper flakes for serving

Instructions
 

  • Preheat the oven to 450 degrees and place the dough on an oiled surface to come to room temperature.
  • Add the tomatoes, shallots, garlic, Italian seasoning, olive oil and a pinch of salt & pepper to a baking dish. Toss to coat evenly and place in the oven for 20 minutes, or until the tomatoes burst. Remove from the oven and separate the veggies from the oil – you can use the oil for serving.
