Vegan Chicken Caesar Salad

This is the BEST Vegan Chicken Caesar Salad! The dressing is creamy, the vegan chicken is crispy. The perfect lunch or dinner!

This Vegan Chicken Caesar Salad is a classic recipe but made with 100% vegan ingredients. It is seriously one of my favorite recipes of all time – and something I make for my family & friends on a regular basis. The dressing is a staple in my house! You will want to put it on everything! The vegan chicken is crispy and the croutons are homemade. This is one that everyone will love!

You will need a food processor, skillet, baking sheet and salad bowl – I love these metal bowls for salad!

steps
step 1: make the croutons
I think one of the reasons this vegan chicken Caesar salad is so good is that everything is made from scratch.
And the first thing we need to make is the croutons. You could really use any kind of bread for this (sometimes I use pita) but my favorite is ciabatta.
Add the bread, oil, garlic powder and a pinch of salt to a baking sheet. Toss to coat and spread in an even layer. Place in the oven for 20 minutes, flipping halfway. Remove and set aside.

step 2: “chicken” and dressing
While the croutons are cooking, we can start on everything else.
The seasoning for the vegan chicken is simple and delicious. You’re really going to get a lot of flavor from charring the vegan chicken.

Heat the remaining oil in a skillet over medium heat. Add the vegan chicken, garlic powder and a pinch of salt & pepper. Toss to coat and spread in an even layer. Allow to cook, undisturbed, until browned, flip and brown the other side. Transfer to a cutting board and cut into strips.
And if you’ve been around TSV for a while, then this vegan Caesar dressing isn’t anything new to you. I have used it in wraps, pizzas and sandwiches. If there is a way to put it on something, I’m gonna do it. It is that good!

step 3: assemble & serve
And now we can bring everything together. Grab your favorite salad bowl – I personally love these big metal bowls.

Add the romaine, vegan chicken, croutons and vegan parmesan to a large bowl. Pour over the dressing and toss to coat.
This is best served right away, so if you are making ahead of time, just leave off the dressing until right before serving!


tips & tricks
I like to use unbreaded & unseasoned vegan chicken. If it is frozen, be sure to thaw it before adding it to the skillet.
You can use grated or shredded vegan parmesan. I added shredded vegan parmesan from Trader Joe’s to my food processor and pulsed until it was grated.

Ingredients

- 2 cups ciabatta cubed
- 1 teaspoon garlic powder separated
- 8 ounces vegan chicken I used Daring
- salt & pepper
- Vegan Caesar Dressing
- 1 head romaine chopped
- 1/3 cup vegan parmesan see notes

Instructions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Add the bread, 1 tablespoon oil, 1/2 teaspoon garlic powder and a pinch of salt to the baking sheet. Toss to coat and spread in an even layer. Place in the oven for 20 minutes, flipping halfway. Remove and set aside.
- Meanwhile, heat the remaining oil in a skillet over medium heat. Add the vegan chicken, remaining garlic powder and a pinch of salt & pepper. Toss to coat and spread in an even layer. Allow to cook, undisturbed, until browned (approx. 2-3 minutes). Flip and brown the other side. Transfer to a cutting board and cut into strips.
- Prepare the vegan Caesar dressing (linked above) and set aside.
- To assemble, add the romaine, vegan chicken, croutons and vegan parmesan to a large bowl. Pour over the dressing and toss to coat. Serve immediately.
