I made these Vegan Buffalo Chicken Plates on a whim when I wasn’t sure what to make for dinner. And they were so good I knew I needed to make them into an actual recipe to share with you. These plates are packed with flavor, they come together in 20 minutes and there is 30+ grams of protein in each serving. A seriously addicting dinner that you will want on repeat!

  • garlic powder
  • smoked paprika
  • pepper
  • onion powder
  • buffalo sauce
  • black beans
  • cooked rice
  • pre-made slaw
  • cilantro
  • vegan ranch
  • pickled onions
  • avocado

steps

step 1: cook the vegan chicken

For a recipe like this, I like to use plain, unseasoned vegan chicken. It will take on the spices and sauce we are going to add to it.

Heat the oil in a skillet over medium heat. Add the vegan chicken and dry seasonings. Toss to coat and spread in an even layer. Cook until browned and toss. Pour in the buffalo sauce and continue to cook until the other side of the vegan chicken is browned – turn down the heat if it splatters too much.

step 2: prep the sides

For the plates we are going to prep black beans and rice. It is best if you have leftover rice, but frozen rice packets are my other favorite. For the beans, I used canned black beans. But you could sub any other kind of bean!

We also need to prep some slaw. I like to buy pre-cut slaw and then add my own dressing. For this recipe I added vegan ranch and cilantro. The perfect flavor combo for buffalo sauce.

step 3: assemble & serve

Now, it is time to bring it all together.

Load up each plate with rice, beans, vegan chicken and slaw. Finish off the plates with pickled onions, avocado and more cilantro. For an extra kick, add another drizzle of buffalo sauce.

tips & tricks

You can either thaw the vegan chicken or leave it frozen. If it is frozen it will just take a little longer to cook.

I used the buffalo sauce from Trader Joe’s, it is new and so good!

I like to use microwave rice packets for this recipe to keep it quick.

You can either leave the beans cold or heat them up.

  • Add the slaw, cilantro and vegan ranch to a bowl. Toss to combine and set aside.
  • To assemble, add some rice, beans, chicken, slaw, pickled onions & avocado to each plate. Top with more cilantro and buffalo sauce.
