Vegan Breakfast Bowls

These Vegan Breakfast Bowls are healthy & delicious. Made with Just eggs, roasted sweet potatoes, black beans & avocado!

I love going out to brunch, but sometimes I don’t want to go out for food when I know I can make it better at home. And these Vegan Breakfast Bowls have all of the brunch vibes you could want AND they taste great. These bowls are also great if you want to meal prep breakfast for the week!
Step One: Make the Potatoes
The roasted sweet potatoes in this recipe are crispy on the outside, tender on the inside and seasoned to perfection!

For the potatoes you’ll need:
- sweet potatoes
- red onion
- red bell pepper
- avocado oil
- garlic powder
- smoked paprika
- turmeric
- onion powder
- salt & pepper
Add all of the sweet potato ingredients to a baking sheet and toss to combine. Spread out in an even layer and place in the oven for 20 minutes. Toss and cook for another 10-15 minutes, or until the potatoes are crispy & cooked through.

Step Two: Make the Vegan Eggs
I LOVE Just eggs – they are vegan “eggs” made from mung beans. I don’t know how they do it, but they truly taste like eggs (to me, at least).
Five minutes before the potatoes are done, spray a non-stick skillet with oil over medium heat. Pour in the Just egg and add pepper to taste. Scramble until cooked through.

Step Three: Assemble
The rest of the bowl is up to you. You can adjust what you add to your bowls depending on what you have on hand, but here is what I added to mine:
- black beans
- avocados
- green onions
- jalapeño slices
- vegan feta
- everything seasoning
- salsa verde


To assemble, add potatoes, eggs, beans & avocado to each bowl. Add your favorite toppings and serve.
If you are making this for meal prep, add the potatoes, eggs and beans to individual containers containers and keep in the fridge. Reheat in the microwave and then add the toppings.

Ingredients
FOR THE SWEET POTATOES
- 2 medium sweet potatoes cubed
- 1/2 red onion diced
- 1 red bell pepper diced
- 2 tablespoons avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 1 15-ounce can black beans drained and rinsed
- 2 avocados sliced
- green onions diced
- jalapeño slices, vegan feta, everything seasoning, salsa verde optional toppings
Instructions
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Add all of the sweet potato ingredients to the baking sheet and toss to combine. Spread out in an even layer and place in the oven for 20 minutes. Toss and cook for another 10-15 minutes, or until the potatoes are crispy & cooked through.
- 5 minutes before the potatoes are done, spray a non-stick skillet with oil over medium heat. Pour in the Just egg and add pepper to taste. Scramble until cooked through.
- To assemble, add potatoes, eggs, beans & avocado to each bowl. Add the optional toppings and serve.

Notes
- I used the 16 oz carton of Just egg, but you can also use the 12 oz container – it will just alter the nutrition info.
- If you can’t find Just egg, you can always use my tofu scramble recipe here.
- I didn’t heat the black beans, but if you want them warmed, just add them to a small sauce pan and have on low heat while prepping everything else.

Easy and YUMMY! I have only made the sweet potato part of this recipe. Can’t wait to have it for breakfast tomorrow, but I made the sweet potatoes in my Ninja flip air fryer and 20 minutes was almost too long. Some of the pieces were burnt. I did not have to add any extra time. I did use my chopper so, maybe the pieces were too small but they were tender and taste fantastic! I will be using this recipe for breakfast sweet potatoes from here on out! Thank you for this wonderful recipe!
This breakfast skillet is vegan, and it was delicious! I made my pancakes with Kodiak Cakes Power Cakes mix to increase the protein content.
