Vegan Beef & Rice Skillet

This Vegan Beef & Rice Skillet doesn’t really have beef or rice, but sort of. Vegan soy beef crumbles & cauliflower rice are cooked in a creamy sauce.

This Vegan Beef & Rice Skillet is a one-pot recipe that packs tons of flavor, is filled with veggies and is still super comforting. The sauce is tomato-based, but is super creamy. And the addition of cauliflower rice sneaks in tons of veggies – you won’t even know there’s cauliflower in there! A quick, easy family dinner!
Step One: Where’s the “beef”
I know that everyone is not a fan of vegan beef crumbles, but I absolutely love them. The ones I use are a soy product and I get them in the refrigerator section (I get mine at Trader Joe’s).
But, if you aren’t a fan, you could always sub cooked lentils!
Heat some olive oil in a large skillet over medium heat. Add diced onion, minced garlic, beef crumbles and dry spices. Cook for 5 minutes, stirring frequently. Pour in the soy sauce & flour and cook for 3 minutes. Add the tomato sauce & broth and bring to a boil.

Step Two: Cauliflower Rice
I have been on a major cauliflower rice kick lately – so don’t be surprised if you see it a lot over the next couple months.
I love that it is an easy way to sneak in veggies. You could also use regular rice, or a mix of both. I also ate some of the leftovers over rice and I was definitely a fan!

Pour in the cauliflower rice and stir. Cover and simmer for 10 minutes. Remove the lid and add non-dairy cream & cream cheese. Stir until smooth and combined. Taste and adjust the seasonings as needed.
You may want to simmer the cauliflower rice for shorter or longer depending on the consistency you like. I prefer mine to be tender with a little bit of bite.
Step Three: Serve
And that’s all there is to it! Top it off with some fresh herbs, like parsley or basil, and serve it up! I like to serve mine with some sort of bread for dipping. Whether you get a crusty ciabatta or lavash, bread is a must for me when eating this one!

You can serve this as a side or a main. It also reheats super well, so make a batch, have it for lunch throughout the week or freeze it for later!

- 2 tablespoons olive oil
- 1 yellow onion diced
- 4 cloves garlic minced
- 12 ounces vegan beef crumbles or sub cooked lentils
- 1/2 teaspoon onion powder
- 1/2 teaspoon pepper
- 2 teaspoons dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 tablespoon low sodium soy sauce
- 2 tablespoons all-purpose flour
- 1 15-ounce can tomato sauce
- 2 cups broth I used vegan chicken broth
- 16 ounces cauliflower rice about 1 head of cauliflower
- 1/2 cup non-dairy cream or sub non-dairy milk
- 8 ounces vegan cream cheese I used Kite Hill
- fresh parsley for serving

Notes
- I used fresh cauliflower rice (not frozen). If using frozen, thaw before adding it to the skillet.
- You may want to simmer the cauliflower rice for shorter or longer depending on the consistency you like. I prefer mine to be tender with a little bit of bite.
- If you want to sub the cauliflower rice for real rice, you can either cook it ahead of time and add 2 cups of cooked rice to the skillet. Or, add 1 cup of dry rice.

This dish is absolutely delicious. Comforting, cozy, yummy and perfect for a cold night. But it confuses me. What is it? Not a soup, not a stew, not a dip. Oh well, who cares. It is yummy!
