This Trader Joe’s Cheesy Chimichurri Garlic Bread is the perfect vegan side dish. This is garlic bread on a whole other level!

Ready to take garlic bread to the next level? Then this Trader Joe’s Cheesy Chimichurri Garlic Bread is for you. It is herby, cheesy deliciousness – and it’s 100% dairy-free! And don’t worry if you don’t have a Trader Joe’s near you. I give you great swaps that will still get you a delicious dish!

- garlic powder
- dairy-free Boursin
- red pepper flakes

steps
step 1: assemble & bake
The great thing about a Trader Joe’s recipe is that there isn’t much prep. Everything is pre-made for us.
Grab your loaf of bread and cut it in half. Spread on the chimichurri and then sprinkle on the garlic powder.
When it comes to adding the “cheese”, my method is to use the back of a spoon. This allows you to spread it on without totally mixing it with the chimichurri. But if it mixes, don’t worry, it will still taste amazing.
Pop the bread in the oven and allow the cheese to melt and the bread to toast.

step 2: slice & serve
When you pull the bread out of the oven, you want to let it cool for a couple minutes. This will allow the cheese to firm up slightly.

I like to drizzle on a little more chimichurri and sprinkle on some red pepper flakes before slicing.
This is a great side dish for any meal, but is especially great with tofu on the grill or a salad!


tips & tricks
You could also make this on the grill – just place the prepared bread on a piece of foil and put it on the grill.Â
If you don’t have a Trader Joe’s, here are some swaps: demi-baguette – 1/2 of your favorite loaf of french or ciabatta bread; use my homemade chimichurri recipe; you can find dairy-free Boursin at other stores, but you could also sub vegan mozzarella or vegan cream cheese.

Ingredients
- 1 demi-loaf ciabatta sliced in half lengthwise
- 4 tablespoons chimichurri plus more for serving
- 1 teaspoon garlic powder
- 4 ounces dairy-free Boursin
- red pepper flakes optional, for serving

Instructions
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Place the sliced bread on the baking sheet. Spread on the chimichurri and sprinkle on the garlic powder. Use the back of a spoon to spread the Boursin on the bread. Place in the oven for 15-20 minutes, or until crispy and the cheese is melted.
- Remove from the oven and allow to rest for 3-5 minutes. Top with more chimichurri & red pepper flakes. Slice & enjoy.
