Trader Joe’s Gochujang Noodles

These Trader Joe’s Gochujang Noodles are ready in 20 minutes and pack the perfect amount of heat. The perfect one-pot noodle recipe!

Who doesn’t love noodles? And these Trader Joe’s Gochujang Noodles are not only sooooo yummy, they also only take 20 minutes to make! This is a Trader Joe’s recipe, but you can easily sub ingredients from other stores – so no worries if you don’t have one near you! The perfect quick bite!
here’s what you need
ingredients
- low sodium soy sauce – or sub tamari
- gochujang paste
- sesame oil
- garlic
- fresh ginger
- oil
- baby bok choy
- Trader Joe’s Thai Wheat Noodles
- green onions
- sesame seeds – optional

You just need a skillet!

steps
step 1: make the sauce
The sauce for these noodles only has 5 ingredients, but it packs a serious punch. The perfect amount of spice and umami!
Combine the soy sauce, gochujang paste, sesame oil, garlic & ginger in a bowl and whisk to combine. That’s it! Your sauce is ready.
Set it aside and we’ll work on everything else.

step 2: cook the veggies
The great thing about this recipe is that everything is made in one pot.

So, the first thing we’re going to tackle is the veggies. And I went with baby bok choy. It is one of my favorite veggies, but I don’t think I use it enough. I need to change that and use it more often!
Just heat some oil, halve the bok choy and add it to the skillet, cut-side down. Cover the skillet and steam for a few minutes.

step 3: finish & serve
Take the bok choy out of the pan and add the noodles, sauce & green onions. Cover and let it steam for a couple of minutes – this will allow the noodles to separate.

Toss until everything is coated and the noodles are warmed through.
Add some noodles and bok choy to each plate, top with more green onion & sesame seeds and enjoy! These noodles are saucy and delicious. You’re going to love them!


tips & tricks
After cooking the bok choy you can leave it halved or chop it up and add it back to the noodles.
Use less gochujang if you are sensitive to heat.

Ingredients
- 2 tablespoons low sodium soy sauce or sub tamari
- 2 tablespoons gochujang paste
- 1 tablespoon sesame oil
- 2 cloves garlic minced
- 1/2 tablespoon fresh ginger minced
- 1 tablespoon oil I used avocado oil
- 2 bunches baby bok choy halved lengthwise
- 2 packs Trader Joe's Thai wheat noodles or sub 14 ounces fresh udon noodles
- 3 green onions diced, greens and whites separated

- Combine the soy sauce, gochujang paste, sesame oil, garlic & ginger in a bowl and whisk to combine. Set aside.
- Heat the oil in a skillet over medium heat. Add the halved bok choy to the skillet, cut-side down. Cover and steam for 2-3 minutes.
- Remove the bok choy from the pan and add the noodles, sauce & whites of the green onions. Cover and steam for 2 minutes. Remove the lid and toss until the noodles are coated. Add a splash of water if needed to loosen the noodles up.
- Add noodles and bok choy to each plate. Top with the leftover green onion & sesame seeds. Enjoy!
