  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  • Place the sliced bread on the baking sheet. Spread on the chimichurri and sprinkle on the garlic powder. Use the back of a spoon to spread the Boursin on the bread. Place in the oven for 15-20 minutes, or until crispy and the cheese is melted.
  • Remove from the oven and allow to rest for 3-5 minutes. Top with more chimichurri & red pepper flakes. Slice & enjoy.

Notes

  • If you don't have a Trader Joe's, here are some swaps: demi-baguette - 1/2 of your favorite loaf of french or ciabatta bread; use my homemade chimichurri recipe; you can find dairy-free Boursin at other stores, but you could also sub vegan mozzarella or vegan cream cheese.
  • You could also make this on the grill - just place the prepared bread on a piece of foil and put it on the grill.
