These Spinach & Feta Pita Pizzas are the perfect quick vegan dinner. Made with just a few ingredients and ready in less than 30 minutes. Kid-friendly too!

These Spinach & Feta Pita Pizzas are the perfect dinner when you don’t feel like cooking anything complicated but want lots of flavor. They are ready in less than 30 minutes, require less than 10 ingredients and taste amazing. Doesn’t get better than that!
here’s what you need
ingredients
- pita
- oil
- dried oregano
- garlic salt
- frozen spinach
- dairy-free Boursin
- vegan feta – I used Follow Your Heart
- red onion
- fresh basil

You’ll need a baking sheet!

steps
step 1: prep
The first thing we need to do is toast the pita. Brush the pita with oil and sprinkle with a little oregano and garlic salt. Pop them in the oven for a few minutes, just to get them slightly toasted.
While those are toasting, combine the thawed, frozen spinach and Boursin in a bowl. Mix until combined.


step 2: finish & serve
Take the pita out of the oven and spread on the spinach/Boursin mixture. Top with vegan feta and some thinly sliced red onion. Put them back in the oven for 8-12 minutes, or until the cheese is melted and the pita is toasted.

Take the pizzas out of the oven and let them sit for a couple minutes. Slice, top with a little more feta & some fresh basil and you’re done.
These pizzas are easy and soooooo yummy!


tips & tricks
You can play around with the toppings! Some other options I think sound good are – cherry tomatoes, sun-dried tomatoes, roasted peppers.
For a crispier topping, turn the oven to broil for the last minute or two.
Vegan cheese gets a little slippery when melted, so be sure to let the pizzas sit for a couple minutes after baking so the cheese has time to set.

Ingredients
- 2 pitas
- oil I used avocado oil
- dried oregano
- garlic salt
- 1/2 cup frozen spinach thawed & drained
- 4 ounces dairy-free Boursin
- 2 ounces vegan feta plus more for serving, I used Follow Your Heart
- 1/4 red onion thinly sliced
- fresh basil optional for serving

Instructions
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Place the pitas on the baking sheet and brush with oil. Sprinkle with a little oregano & garlic salt and place in the oven for 3 minutes.
- Meanwhile, combine the spinach & dairy-free Boursin in a bowl.
- Remove the pitas from the oven and spread even amounts of the spinach mixture on each pita. Top with vegan feta & red onion and place back in the oven for 8-12 minutes, or until the cheese is melted and the pita is toasted.
- Remove from the oven and allow to cool for a couple minutes. Slice, top with a little more feta & fresh basil and enjoy.
Notes
