These Spinach & Feta Pita Pizzas are the perfect quick vegan dinner. Made with just a few ingredients and ready in less than 30 minutes. Kid-friendly too!
Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
Place the pitas on the baking sheet and brush with oil. Sprinkle with a little oregano & garlic salt and place in the oven for 3 minutes.
Meanwhile, combine the spinach & dairy-free Boursin in a bowl.
Remove the pitas from the oven and spread even amounts of the spinach mixture on each pita. Top with vegan feta & red onion and place back in the oven for 8-12 minutes, or until the cheese is melted and the pita is toasted.
Remove from the oven and allow to cool for a couple minutes. Slice, top with a little more feta & fresh basil and enjoy.
Notes
You can play around with the toppings! Some other options I think sound good are - cherry tomatoes, sun-dried tomatoes, roasted peppers.
For a crispier topping, turn the oven to broil for the last minute or two.
Vegan cheese gets a little slippery when melted, so be sure to let the pizzas sit for a couple minutes after baking so the cheese has time to set.
