This Smoky Tomato Soup with Heart-Shaped Croutons is the perfect vegan Valentine’s day recipe! Cozy, comforting and heart-warming food.

We are getting Valentine’s Day ready with this Smoky Tomato Soup with Heart-Shaped Croutons. Because what says “I love you” more than a tasty home-cooked meal?! I made my boyfriend tomato soup for our first Valentine’s Day together last year, so I think it is just our tradition now.
This tomato soup is simple & delicious. The garlic heart-shaped croutons are made with crescent dough and are perfect for dunking. This is the type of recipe that warms you from the inside out.
Step One: Roast the Veggies
The base of any great tomato soup is fresh veggies. I like to roast mine so they get that smoky flavor. For this soup I used a combo of campari and grape tomatoes. But feel free to use any combo of tomatoes you want!
Add the tomatoes (halve any larger tomatoes), chopped onion, garlic, carrots, oil and a big pinch of salt & pepper to a parchment-lined baking sheet. Toss to coat and place in the oven on the middle rack for 1 hour.

Step Two: Heart-Shaped Croutons
I am obsessed with these heart-shaped croutons! They are so easy to make and are so cute! I got my heart-shaped biscuit cutters here.

Roll out a can of crescent dough on a lightly floured surface. Pinch together any seams in the dough. Use the biscuit cutter to make 10-15 hearts and place on another parchment-lined baking sheet – you may need to roll out the scraps of dough a couple of times.
Brush the hearts with the melted butter and sprinkle with garlic powder & garlic salt. When you pull the veggies out of the oven, put the croutons in. They will brown up in 10-12 minutes.

Step Three: Finish the Soup
Transfer the tomatoes & their juices to a standing blender with 1 cup of broth and chipotle peppers (these are optional, but add that smoky flavor). Blend until smooth.

Transfer the mixture to a stock pot over medium heat. Add the remaining broth, thyme, oregano & red pepper flakes to the pot and stir to combine. Taste and add more salt & pepper if needed.

Step Four: Serve
To serve, ladle the hot soup into bowls and top with fresh basil. Have the heart-shaped croutons on the side ready for dunking. Just be sure to share them with someone you love!

The soup can be stored in the fridge/freezer and reheated. And the croutons can be reheated in the microwave or air fryer.

FOR THE SOUP
- 3 pounds tomatoes I used a mix of campari & grape
- 1 yellow onion cut in chunks
- 6 cloves garlic peeled
- 3 carrots peeled & cut in 2" pieces
- 1/3 cup olive oil
- salt & pepper
- 3 cups broth separated
- 1-2 chipotles in adobo optional, to taste
- 1 teaspoon dried thyme
- 1 teaspoon oregano
- red pepper flakes to taste
- fresh basil for serving
FOR THE HEART-SHAPED CROUTONS
- 1 8-ounce can crescent dough
- flour for rolling out dough
- 1 tablespoon vegan butter melted
- garlic powder
- garlic salt
Instructions
- Preheat the oven to 375 degrees and line 2 baking sheets with parchment paper.
- Add the tomatoes (halve any larger tomatoes), onion, garlic, carrots, oil and a big pinch of salt & pepper to one of the baking sheets. Toss to coat and place in the oven on the middle rack for 1 hour.
- While the tomatoes are roasting, roll out the crescent dough on a lightly floured surface. Pinch together any seams in the dough. Use a biscuit cutter to make 10-15 hearts and place on the other baking sheet – you may need to roll out the scraps of dough a couple of times. Brush the dough with the melted butter and sprinkle with garlic powder & garlic salt.
- Pull the tomatoes out of the oven and put the croutons in. Let the tomatoes cool and cook the croutons for 10-12 minutes, or until browned. Remove from the oven.
- Transfer the tomatoes & their juices to a standing blender with 1 cup of broth and the chipotle peppers. Blend until smooth. Transfer the mixture to a stock pot over medium heat. Add the remaining broth, thyme, oregano & red pepper flakes to the pot and stir to combine. Taste and add more salt & pepper if needed.
- Once hot, ladle the soup into bowls, top with fresh basil and serve the heart-shaped croutons on the side for dipping.

- If you get the same set of heart-shaped biscuit cutters that I have – I used the second smallest cutter in the set. I believe it is 2″.
