Smashed Bean and Avocado Toast
This Smashed Bean and Avocado Toast is next level. The perfect healthy vegan snack – packed full of mexican flavors and nutrient-rich ingredients.
Remember a couple weeks ago when I was over-the-moon, OBSESSED with the Green Goddess Sandwich?
Well, I may have a new love in my life.
And it is this Smashed Bean and Avocado Toast.
Avocado toast is already a staple in my house.
Up until now, my favorite way to eat it has been with some “Everything But the Bagel” seasoning from Trader Joe’s and a nice drizzle of sriracha.
Perfection.
That was until this new combo came around.
The way this recipe came about was I was thinking about my Zesty White Bean Toast (another one of my favorite breakfast/brunch recipes) and I wanted to combine that with my favorite mexican food flavors AND avocado toast.
I guess you could call it “The Trifecta” of all my favorites.
The bulk of the flavor comes from the mashed beans.
And these aren’t just any mashed beans.
Pinto beans are combined with garlic, jalapeño, cilantro, red onion and some seasonings to make the perfect flavor explosion!
Note: when it comes to this bean mixture you can eat it on your toast hot or cold. Honestly, as soon as you taste it, you won’t want to take the time to heat it up. You’ll be eating it with a spoon!
After you have the bean mixture ready, you are 95% done.
Toast some bread, cut up an avocado, and you are good to go.
Serve this with as many additional toppings as you like. I personally like radish slices, jalapeño, hot sauce and cilantro.

Smashed Bean and Avocado Toast
Ingredients
FOR THE BEANS
- 1 can pinto beans drained and rinsed
- 1/4 cup cilantro
- 2 tbsp olive oil
- 1 jalapeño
- 1/4 red onion
- 2 garlic cloves
- 1/2 tsp cumin
- 1/4 tsp chili powder
- salt & pepper to taste
FOR THE TOAST
- 6 slices bread
- 2 avocados peeled, pitted and sliced
- Optional Toppings: cilantro, jalapeño slices, hot sauce, radish slices
Instructions
- Combine all of the bean ingredients in a food processor and pulse until combined. Taste and adjust seasonings as needed.
- Toast bread. Spread desired amount of bean mixture* on each slice of toast, followed by avocado slices and any additional toppings.
- Serve and enjoy!
