Sheet Pan Vegan Sausage & Cauliflower

This Sheet Pan Vegan Sausage & Cauliflower is the perfect weeknight dinner. Served over rice with a pesto aioli!

I love a quick sheet pan dinner. And this Sheet Pan Vegan Sausage & Cauliflower is at the top of my list. Cauliflower florets are tossed in seasonings and then roasted. Then, we add slices of vegan sausage to the sheet pan and give it one last roast. The cauliflower & sausage get nice & charred and then are served with a pesto aioli. This is a super easy and satisfying dinner idea!
Here’s what you need
Ingredients
- cauliflower florets
- yellow onion
- avocado oil
- garlic powder
- onion powder
- smoked paprika
- chili powder
- salt & pepper
- Beyond Meat Italian Sausage
- vegan mayo
- vegan pesto
- spinach, rice, basil – optional, for serving
Equipment
- 9×13 baking dish
- skillet

Steps
Step 1: Prep the Veggies & Sausage
Since the cauliflower takes a little longer to cook, we are going to start with that.

Add the cauliflower, onion, oil and dry seasonings to the baking sheet and toss to coat. Spread in an even layer and place in the oven for 20 minutes.
Remove from the oven, toss the veggies and add the sausage slices to the baking sheet. Place back in the oven for 15-20 minutes, or until the sausage and veggies are charred.

Step 2: Make the Pesto Aioli
The pesto aioli adds a nice richness to this recipe that I totally love. And I wanted to keep it super simple, so I used pre-made pesto.

To make the aioli just combine the vegan mayo and pesto in a bowl and mix to combine.

Step 3: Assemble & Serve
I chose to serve this with rice & spinach, but you could omit the rice if you want to keep it low carb.

If not, add the rice, spinach, cauliflower & sausage to each plate. Add a dollop of pesto aioli to the top with some fresh basil and you are ready to dig in!
This is such a yummy recipe that everyone will love!


Tips & Tricks
For a lighter meal you can omit the mayo and just serve this with traditional pesto.

- 1 head cauliflower cut in florets
- 1 small yellow onion sliced
- 2 tablespoons avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 pound Beyond Meat Italian Sausage cut in rounds
- 1/3 cup vegan mayo
- 1/4 cup vegan pesto
- spinach, rice, basil optional, for serving

Instructions
- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Add the cauliflower, onion, oil and dry seasonings to the baking sheet and toss to coat. Spread in an even layer and place in the oven for 20 minutes.
- Remove from the oven, toss the veggies and add the sausage slices to the baking sheet. Place back in the oven for 15-20 minutes, or until the sausage and veggies are charred.
- Meanwhile, combine the mayo and pesto in a bowl. Set aside.
- To assemble, add spinach & rice to each bowl. Top with the sausage, veggies & a dollop of pesto mayo. Sprinkle with fresh basil and enjoy!

Just made this for dinner tonight because I had some Beyond sausage to use up in the fridge. I didn’t add the spinach or fresh basil, but it was still very delicious over rice.
