Garlic Cauliflower Rice with Kale

This Garlic Cauliflower Rice with Kale is a low carb rice alternative. The perfect veggie side dish that is packed with flavor!

If you are looking for a low carb rice replacement, that doesn’t skimp on flavor, then you need to try this Garlic Cauliflower Rice with Kale! It only takes 15 minutes to make and can be used as a side dish, or as the base for a bowl.
Step One: Prep the Cauliflower Rice
There are many ways you can find/make cauliflower rice. To keep it simple, you can do what I did and buy it from the frozen section. It comes riced, which makes this recipe super quick.

If you can’t find riced cauliflower, you can also rice it yourself. Grab a head of cauliflower and use a cheese grater to get that rice shape. Or, pulse it in a food processor.
The one thing you want to keep in mind if you are using frozen cauliflower rice is that it is best to thaw it before making this recipe. I like to do that by adding it to a fine mesh strainer and rinsing it with water until thawed. Drain and press out as much water as possible – the less liquid, the easier it is to cook.

Step Two: Cook
Cooking this rice is super quick. So, be sure to have all of your ingredients prepped and ready to go!

Melt some vegan butter in a skillet over medium heat. Add diced onion & garlic and cook down for 3 minutes, stirring frequently so it doesn’t burn.
Add the cauliflower rice, and a healthy pinch of salt & pepper. Cook for 2 more minutes. Be sure to keep an eye on it and stir frquently.
Add chopped kale & lemon juice and toss until the kale is wilted. Give it a taste and adjust the salt, pepper & lemon juice.

Step Three: Serve
And that is it! This cauliflower rice side dish is ready to eat. It has bright flavors and packs in all the veggies you need into one side.

This is a great rice replacement. Use it anywhere you would normally use rice – bowls, burritos, or as a side.

Tips & Tricks
If you use frozen cauliflower rice, add it to a fine mesh strainer and rinse it with water until thawed. Drain and press out as much water as possible. You don’t want there to be too much liquid in the pan. You can also find riced cauliflower in the fresh section. You can also rice your own cauliflower by grating a whole head.
I like my cauliflower rice to have a slight bite to it. If you prefer a more cooked texture, increase the cook time once you add the cauliflower to the skillet.
If the pan seems too dry you can add 1 or 2 tablespoons of broth.
