Mediterranean Chickpea Salad Sandwiches

These Mediterranean Chickpea Salad Sandwiches are layered with vegan pesto, smashed chickpea salad, vegan feta and greens. The perfect vegan lunch!
I have been on a serious sandwich and salad kick lately and these Mediterranean Chickpea Salad Sandwiches are easily moving to the top of my list! The chickpea salad has all of your favorite mediterranean flavors and can be made in the food processor in just a couple minutes. The pesto and greens add some brightness. And don’t get me started on these everything sandwich rolls – out of this world. A quick and easy lunch or dinner!
Step One: Toast the Bread
Ok, these everything but the bagel rolls from Trader Joe’s are my absolute favorite! They pack so much flavor in a cute little package. If you don’t have a Trader Joe’s near you, try checking your local store. Other brands have picked up on the popularity of everything-flavored things and I have seen them in my local stores as well. You could also use everything bagels!
I think we all know how to toast bread. So pop the rolls in the toaster, air fryer or oven and cook until toasty.
Step Two: Make the Chickpea Salad
Chickpea salad has been one of my favorites for years – you can find my other favorite variation here. This might be my new favorite way to make it! Here is what you need:
- chickpeas
- vegan mayo
- vegan feta
- garlic
- sun-dried tomatoes
- fresh basil
- dijon mustard
- salt and pepper
Add everything to a food processor and just give it a few pulses. You could also smash everything by hand, but the food processor is way faster. Give it a taste and adjust any of the seasonings you need to.
At this point, you can place the chickpea salad in the fridge to chill, or you can assemble.
Step Three: Assemble
To the top of each roll, spread on some pesto – I used store-bought, but you can find my favorite homemade pesto recipe here. To the bottom of each roll, layer chickpea salad, more vegan feta and microgreens. Close up the sandwiches, slice in half and dig in.
These sandwiches are filling, but not too heavy. They have all of my favorite bright flavors. They are a must make!

Mediterranean Chickpea Salad Sandwiches
Ingredients
- 1 15-ounce can chickpeas drained and rinsed
- 2 tablespoons vegan mayo
- 2 ounces vegan feta crumbled, plus more for serving
- 1 clove garlic minced
- 2 tablespoons sun-dried tomatoes
- 3 large basil leaves
- 1 tablespoon dijon mustard
- salt and pepper to taste
- 4 tablespoons vegan pesto homemade or store-bought
- microgreens or sub arugula
- 4 sandwich rolls I got mine at Trader Joe's

Instructions
- Toast the sandwich rolls in the oven, toaster or air fryer.
- Meanwhile, combine the chickpeas, mayo, feta, garlic, tomatoes, basil, dijon, salt & pepper in a food processor and pulse a couple times until combined. Taste and adjust the seasonings as needed.
- To the top of each roll, spread on some pesto. To the bottom of each roll, layer chickpea salad, more feta and microgreens. Close the sandwiches and serve.

Delicious! Made an easy, no cook dinner on a hot summer night. I couldn’t find a vegan pesto at my supermarket so I used a red pepper and artichoke spread which was great. Used a sweet onion roll and it was so good! Taking the leftovers for lunch today!
