Lemon Ricotta Lavash Pizza

This Lemon Ricotta Lavash Pizza is the perfect vegan appetizer, lunch or light dinner! A super thin lavash crust, tofu ricotta and lots of toppings!

This Lemon Ricotta Lavash Pizza recipe is so fun, so easy and sooooo tasty! The lavash makes for a super thin and crispy crust. The lemon ricotta is made from tofu, so lots of added protein! And you can have so much fun with the toppings. This is a perfect party appetizer to share or a light lunch or dinner.
Step One: Make the Lemon Ricotta
I have been making tofu ricotta for a longggg time. But I took the original recipe and made a couple tweaks to bring out LOTS of lemon & garlic flavors. Since this is the base of the pizza (and basically the star of the show) I really wanted the flavors to shine.

Here is What You Need:
- firm tofu
- lemon juice
- garlic
- olive oil
- salt & pepper
Add everything to a food processor and blend until smooth. The lemon juice & garlic will jump out at you, but once they are on the pizza and combined with everything else it just works! The ingredient list is short, but I’m telling you the combo comes together in a super smooth tasty “cheese” sauce.
Step Two: Bake the Lavash
If you’ve never had lavash, you need to give it a try. It is a super thin flatbread and is great for wraps! But it also makes a great pizza crust – especially if you love thin crust!
To bake the lavash, place it on a baking sheet and add the tofu ricotta. Spread it out to the edges in an even layer and place it in the oven for 8-10 minutes. The lavash should be crispy and the ricotta should be hot.

Step Three: Assemble & Eat

Pull the pizza out of the oven and start layering on the toppings. You can really switch up the toppings since the ricotta is a clean base for most toppings.
I like to cut the pizza first and then add the toppings. And I placed the arugula down the center of the board (rather than on the pizza) for a fun look, but you can obviously put it right on each piece.
This pizza is a fun one to share for a quick bite, or take it all for yourself!

Ingredients
FOR THE TOFU RICOTTA
- 1/2 block firm tofu drained & patted dry
- 1 lemon juiced
- 2 cloves garlic peeled
- 1 tablespoon olive oil
- salt & pepper to taste
FOR THE PIZZA
- 1 piece lavash
- 2 tablespoons sun-dried tomatoes in oil, roughly chopped
- arugula
- balsamic glaze
- parsley chopped
- pickled onions optional

Instructions
- Preheat oven to 450 degrees.
- Add the ricotta ingredients to a food processor and blend until smooth. Taste and adjust the seasonings as needed.
- Place the lavash on a baking sheet and add the ricotta. Spread out evenly to the edges and place in the oven for 8-10 minutes, or until crispy.
- Remove from the oven and slice into 8 pieces. Top with sun-dried tomatoes, arugula, parsley and pickled onions. Drizzle with balsamic glaze and a little more olive oil. Serve and enjoy!
