Chipotle Tofu Burrito Bowls

These Chipotle Tofu Burrito Bowls are filled with crispy baked tofu, black beans, rice, veggies and a super delicious cilantro yogurt sauce!
These Chipotle Tofu Burrito Bowls have everything you could want in an easy weeknight dinner. The tofu is tossed in a homemade chipotle sauce before being baked until crispy. It is layered over rice with black beans, green onion & red onion before being drizzled with the BEST cilantro yogurt sauce. This is perfect for an easy dinner or meal prepped lunch!
Step One: Make the Chipotle Tofu
For the tofu sauce, you will need:
- chipotle pepper in adobo
- adobo sauce
- oil
- garlic powder
- onion powder
- cumin
- salt
- pepper
- lime
Combine all of the sauce ingredients in a bowl – you can thin it down with water if needed. Cube a block of tofu, add it to a bowl with the sauce and toss to combine. Transfer the tofu to a parchment-lined baking sheet and bake for 20 minutes. Flip and cook for another 5-10 minutes – you want the tofu to have a nice char on it.
Step Two: Get Saucy
While the tofu is baking, it is time to make the cilantro yogurt sauce. And let me tell you…you’ll want to put this stuff on everything! It has the perfect amount of spice, tang and creaminess.
Here is what you need:
Add everything to a food processor and blend until smooth. Give it a taste and adjust the seasonings as needed. This sauce is bright, fresh and gives these bowls the perfect kick!
Step Three: Assemble
And now it is time to assemble. Layer each bowl with rice and top it with crispy tofu, drained black beans, thinly sliced red onion, avocado and green onion.
Drizzle over some of that delicious green sauce and have plenty of lime wedges and tortilla chips on the side.

Ingredients
FOR THE TOFU
- 1 block extra firm tofu drained, pressed and cubed
- 1 chipotle pepper in adobo chopped
- 1 tablespoon adobo sauce from the can
- 2 tablespoons oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 lime juiced
- water to thin
FOR THE CILANTRO YOGURT SAUCE
FOR THE BOWLS
- 2 cups cooked rice
- 1 15-ounce can black beans drained and rinsed
- 2 small avocados sliced
- 1/4 red onion thinly sliced
- cilantro, lime wedges, tortilla chips for serving

- Preheat the oven heat to 400 degrees and line a baking sheet with parchment paper. Combine the tofu sauce ingredients (chipotles through lime juice) in a bowl and stir to combine – adding 1-2 tablespoons of water if needed. Cube the tofu and add it to the sauce. Toss to coat and spread out on the baking sheet. Place in the oven and bake for 20 minutes. Flip and cook for another 5-10 minutes, or until crispy.
- Add all of the cilantro yogurt sauce ingredients to a food processor. Blend until combined. Taste and adjust seasonings as needed. Set aside.
- To assemble, add rice to each bowl and top with tofu, beans, avocado, red onion and the remaining green onions (from the sauce). Top with yogurt sauce and serve with more cilantro, lime wedges and tortilla chips.
This is really good. I added lemon zest and cilantro to my rice. I also added little but if soy sauce to the tofu for more salty. These burrito bowls hit with the whole family!
