These Chimichurri White Beans & Toast are the perfect vegan side dish. The beans are tossed in herby chimichurri sauce and then marinated for 30 minutes – so they can absorb all of that tasty sauce. How to Make Chimichurri White Beans

The chimichurri is super simple to make. Grab all of your ingredients and either toss them into a food processor OR (for a more rustic feel) chop them by hand.

Add the chimichurri to a large bowl. Drain and rinse 2 cans of white beans and add them to the bowl with the chimichurri. Give it a stir and place them in the fridge. This will allow the beans to marinate in the sauce and absorb all of those tasty flavors. You can also let them marinate overnight!

How to Make Garlic Toast

Slice up the baguette – you can use ciabatta or french bread. Brush one side of each slice with vegan butter and sprinkle with garlic powder and garlic salt. The key to the BEST garlic toast is to go heavy handed on the garlic powder and SUPER light handed with the garlic salt. Just a tiny pinch is all you need.

Heat a griddle over medium-high heat and place the baguette slices butter-side down. Once they are nice and toasty, flip with tongs and brown the other side. Remove from the heat.

To serve, spoon white beans on the garlic toast – and that’s about it. You can either do the spooning yourself and make little crostinis, or you can leave the beans in the bowl and let everyone spoon their own.

  • Prepare the chimichurri according to the instructions. Add the beans and toss to combine. Place in the fridge for at least 30 minutes to marinate.
  • Cut the baguette into slices. Butter one side of each slice and sprinkle with garlic powder. Add a tiny sprinkle of garlic salt. Heat a griddle over medium-high heat and place the baguette slices butter-side down. Cook until toasted, flip and toast the other side. Remove from the griddle.
  • Remove the beans from the fridge, taste and adjust the seasonings as needed.
  • Serve the beans with the toasted garlic bread.
