steps

step 1: make the quesadillas

Nothing crazy when it comes to this step – we are making quesadillas.

Luckily, vegan cheese has come a long way from when I first went vegan 10 years ago. Now, it actually melts!

So, heat some oil in a skillet and lay out 1 tortilla. Sprinkle on the cheese and top with another tortilla. Brown on both sides and make sure the cheese is melted before removing from the heat.

step 2: serve it up

Next, grab your bat-shaped cookie cutter and get to cutting.

I was able to get about 5 bats from each quesadilla, but this will vary depending on the size of your tortillas and cookie cutter. Be sure not to throw the scraps away – those are a perfect snack before eating your snack 😂

You can serve these on their own or with your favorite dips – salsa, guac, etc.

These little quesadillas are so fun, you’re going to love them!

tips & tricks

Be sure to keep an eye on the heat while the quesadillas are cooking. If the tortillas are browning too quickly (aka before the cheese is melted) turn down the heat.

You can make these ahead of time and then reheat the bats right before serving – just keep in the fridge until ready to reheat.

Ingredients

  • avocado oil
  • 4 large flour tortillas
  • 7 ounces shredded vegan cheddar I used Follow Your Heart
  • cilantro, salsa, guac optional, for serving

Instructions

  • Heat some oil in a skillet over medium heat. Lay down one tortilla in the skillet and top with cheese. Lay another tortilla on top and cook until the bottom side is browned. Flip and cook until the other side is browned and the vegan cheese is melted. Remove from the skillet and repeat with the remaining ingredients.
  • Place the finished quesadillas on a cutting board. Use the cookie cutter to punch out the bats – I was able to get 5 bats per quesadilla. If the cookie cutter doesn't go all the way through, use a sharp knife to cut out the edges.
  • Serve with the optional toppings and enjoy!
