Ingredients

  • avocado oil
  • 4 large flour tortillas
  • 7 ounces shredded vegan cheddar I used Follow Your Heart
  • cilantro, salsa, guac optional, for serving

Instructions

  • Heat some oil in a skillet over medium heat. Lay down one tortilla in the skillet and top with cheese. Lay another tortilla on top and cook until the bottom side is browned. Flip and cook until the other side is browned and the vegan cheese is melted. Remove from the skillet and repeat with the remaining ingredients.
  • Place the finished quesadillas on a cutting board. Use the cookie cutter to punch out the bats - I was able to get 5 bats per quesadilla. If the cookie cutter doesn't go all the way through, use a sharp knife to cut out the edges.
  • Serve with the optional toppings and enjoy!

Notes

  • Be sure to keep an eye on the heat while the quesadillas are cooking. If the tortillas are browning too quickly (aka before the cheese is melted) turn down the heat.
  • You can make these ahead of time and then reheat the bats right before serving - just keep in the fridge until ready to reheat.
