    This is one of those recipes that just comes together out of nowhere. I was perusing the pasta aisle one day and stumbled on this super cute alphabet pasta! I knew immediately that I had to make a soup with it. And with a jar of vegan bolognese sitting in my fridge, it just all came together. Here you have it...a super quick and tasty soup recipe. Perfect for kids AND adults!

    How to make 3-Ingredient Vegan Alphabet Soup

    The instructions for this soup are beyond simple. Add the pasta, sauce and broth to a pot and cook until the pasta is tender. Easy enough. But let's talk about the ingredients themselves.

    I got the alphabet pasta at my local grocery store. There were surprisingly a lot of brands that make it. That being said, a lot of them had dairy. So, be sure to check the label. Or grab the one I used here.

    As for the sauce. I used the Trader Joe's Vegan Bolognese! This stuff is really good and it has veggies in it - perfect for a soup like this where we aren't adding any extra veggies. If you can't get your hands on this specific sauce, be sure to use a good quality marinara.

    And for the broth, I used vegan chicken broth. But feel free to swap it for your favorite vegetable broth.

    How to serve 3-Ingredient Vegan Alphabet Soup

    Once the pasta is cooked through, it is time to serve up this soup. And, while this soup is technically only 3 ingredients, you can obviously serve it up with a couple of extras.

    I served mine with some fresh parsley and warm bread on the side. But red pepper flakes, hot sauce or lime wedges would also be great.

    This soup has all of the nostalgia of childhood canned soup, but is elevated with fresh-er ingredients. It is a must try!

    3-Ingredient Vegan Alphabet Soup

    This 3-Ingredient Vegan Alphabet Soup is a super quick & fun recipe! Think of it like homemade spaghetti-o's!

    Ingredients

    • 18 oz marinara from a jar*
    • 3 cups broth
    • 1 7-ounce bag alphabet pasta
    • parsley, red pepper flakes, hot sauce, lime wedges, bread optional, for serving

    Instructions

    • Add all of the ingredients to a pot and bring to a boil. Once boiling, lower heat.
    • Stir frequently so the pasta doesn't stick to the bottom.
    • Once the pasta is cooked through, serve hot with optional toppings.

    Notes

    *I used the Trader Joe's Vegan Bolognese. If you can't get your hands on this, use a good quality marinara sauce.
    **The pasta will continue to absorb the sauce/broth as it sits. If you want a more "brothy" soup, then I would suggest using less pasta or more broth. You can also add more broth to the leftovers.
