Instructions
Add all of the ingredients to a pot and bring to a boil. Once boiling, lower heat.
Stir frequently so the pasta doesn't stick to the bottom.
Once the pasta is cooked through, serve hot with optional toppings.
Notes
I used the Trader Joe's Vegan Bolognese. If you can't get your hands on this, use a good quality marinara sauce.
The pasta will continue to absorb the sauce/broth as it sits. If you want a more "brothy" soup, then I would suggest using less pasta or more broth. You can also add more broth to the leftovers.
