Vegan Sausage & Zucchini Skillet

This Vegan Sausage & Zucchini Skillet is a healthy, high-protein vegan dinner idea. Serve over rice for a simple meal ready in less than 30 minutes!

This Vegan Sausage & Zucchini Skillet is the PERFECT low carb, high protein, vegan dinner idea. And it’s ready in just 25 minutes. If you are short on time, but want tons of flavor then you need to give this vegan skillet dinner a try!
Step One: Brown the “Sausage”
The first thing we want to do is brown the vegan sausage. I like to use Beyond Meat Spicy Italian sausage for this recipe. It adds great flavor, lots of protein and the perfect crunch.
You can usually find this sausage in the refrigerator or freezer section. Just be sure the sausage is thawed beforehand so that you can cut it into rounds.
Heat some oil in a skillet over medium heat. Add the sausage and cook until browned on both sides (approx. 3 minutes per side). Remove the sausage from the skillet and set aside. Leave the leftover oil in the skillet.

Step Two: Cook the Veggies
Since we are doing all of this in one skillet, you are just going to place the empty skillet back on the stove. Have your veggies prepped – chop up 1/2 an onion and cube the zucchini.

Add the zucchini, onion, Italian seasoning, garlic powder, salt & pepper to the skillet. Cook for 5-10 minutes, or until the zucchini is cooked to your liking. Add the sausage back to the skillet and toss until heated through again. Add some fresh basil and remove from the heat.
TIP: The cook time for the veggies will totally depend on how you like to eat the zucchini. I personally like mine tender-crisp, which takes about 6-8 minutes of cooking.

Step Three: Serve
If you want to keep this very low carb, you could ditch the rice. But, I like to add some cooked rice to each bowl and top it with the sausage & veggies.

And since I love some spice, I also topped mine with some chili crunch. Not necessary, but totally delicious!
This is a great meal prep recipe! Add each serving to an individual container and keep them in the fridge for easy lunches and dinners!

- 1/2 yellow onion diced
- 3 cups zucchini cubed, about 3 small zucchini

- 2 tablespoons fresh basil chopped
- 2 cups cooked rice optional
- chili crunch optional, for serving

- Add the zucchini, onion & dry seasonings to the skillet and cook for 5-10 minutes, or until the zucchini is cooked to your liking. Add the sausage back to the skillet and toss until heated through again. Add the basil and remove from the heat.
- To serve, add rice to each bowl and top with the sausage/veggies. Finish with some chili crunch.

Notes
- I used the spicy Italian flavor, but you can use the mild or brats. If you prefer a different vegan sausage brand, cook it according to the package instructions.
- You can also add the cooked rice directly to the skillet with the sausage & veggies.
