Vegan Sausage & Peppers Rice Skillet

This Vegan Sausage & Peppers Rice Skillet is such a quick and delicious dinner idea! A one-pot dinner that is ready in 30 minutes!

I love a skillet dinner! It comes together quickly, cooks in one pan…doesn’t get much better than that! This Vegan Sausage & Peppers Rice Skillet has the perfect balance of veggies, protein and carbs. It truly is a complete meal. Great for a weeknight dinner or meal prepped lunches!
Making the Vegan Sausage
The first thing on the to-do list is browning the vegan sausage. I used Beyond Meat Spicy Italian sausage that I cut into rounds. Add them to a skillet with olive oil and cook for a couple minutes on each side, or until browned. Remove from the skillet, but leave the leftover oil.
TIP: Feel free to sub your favorite vegan sausage if you like another brand better!
We Need Veggies
We can’t have a sausage & peppers recipe without the peppers. Once the sausage is out of the skillet add in 2 bell peppers (any color will work), yellow onion, garlic and some dry seasonings.
You want to let the veggies cook down for a couple minutes, giving everything a good mix while it cooks.

Finish it Off and Serve
Pour dry white rice into the skillet with the veggies and let it get toasty – a couple minutes max. Pour in the broth and bring to a boil. Lower the heat, cover and simmer for about 15 minutes. You want the rice to be tender and all of the liquid to be absorbed.
Once the rice is cooked, it is time to finish it off. Add the sausage back and give everything a mix. Have a taste to see if it needs any salt. And now, my friend, you are DONE! Finish it off with some fresh parsley and serve it up.
If you plan to make this for meal prep, separate everything into 4 containers and let it cool completely before placing it in the fridge. This recipe needs to be on your rotation!

Vegan Sausage & Peppers Rice Skillet
Ingredients
- 2 tablespoons olive oil
- 8 ounces vegan sausage sliced in rounds, I used Beyond Meat Italian
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 yellow onion chopped
- 3 cloves garlic diced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
- 1 cup white rice dry
- 2 cups broth I used vegan chicken broth
- salt if needed
- fresh parsley for serving

- Heat the olive oil in a skillet over medium heat. Add the vegan sausage and cook until browned on both sides (approx. 2.5 minutes per side). Remove the sausage from the skillet and set aside. Leave the remaining oil in the skillet.
- Add the bell peppers, onion, garlic and dry seasonings to the skillet. Cook for a couple of minutes. Add in the rice and toast for a couple minutes. Pour in the broth and bring to a boil. Lower heat, cover and simmer for 15 minutes (or all of the liquid is absorbed).
- Add the sausage back to the skillet and toss to combine. Taste and add salt if needed. Top with chopped parsley and serve hot.

SOOO quick and easy … AND yummy!
Not sure what I did wrong but my rice ended up mushy. I used basmati rice. Flavor was also a little mild so the rice was a bit bland. This was just an okay recipe for me.
Great recipe for a weeknight dinner! Only change I made was that I used long grain brown rice instead of white. It needed to cook longer (~40 mins), and I added a splash of water added midway through the cook time. It turned out perfect! Delicious use of sausage outside of pasta, too. Thanks!
