Heat the oil in a skillet over medium heat. Add the sausage and cook until browned on both sides (approx. 3 minutes per side). Remove the sausage from the skillet and set aside. Leave the leftover oil in the skillet.
Add the zucchini, onion & dry seasonings to the skillet and cook for 5-10 minutes, or until the zucchini is cooked to your liking. Add the sausage back to the skillet and toss until heated through again. Add the basil and remove from the heat.
To serve, add rice to each bowl and top with the sausage/veggies. Finish with some chili crunch.

I used the spicy Italian flavor, but you can use the mild or brats. If you prefer a different vegan sausage brand, cook it according to the package instructions.
You can also add the cooked rice directly to the skillet with the sausage & veggies.
