  • Heat the oil in a skillet over medium heat. Add the sausage and cook until browned on both sides (approx. 3 minutes per side). Remove the sausage from the skillet and set aside. Leave the leftover oil in the skillet.
  • Add the zucchini, onion & dry seasonings to the skillet and cook for 5-10 minutes, or until the zucchini is cooked to your liking. Add the sausage back to the skillet and toss until heated through again. Add the basil and remove from the heat.
  • To serve, add rice to each bowl and top with the sausage/veggies. Finish with some chili crunch.

Notes

  • I used the spicy Italian flavor, but you can use the mild or brats. If you prefer a different vegan sausage brand, cook it according to the package instructions.
  • You can also add the cooked rice directly to the skillet with the sausage & veggies.
