Salads got a whole lot tastier with this Vegan Meatball Salad with Creamy Dreamy Green Sauce. Packed full of butter lettuce, cauliflower meatballs, red onions, jalapeños and the BEST green dressing.
The weather has been getting warmer and salads are really my jam right now. Something about cool greens, a warm topper and creamy dressing gets me all giddy. The trick with salads is jazzing them up so they are exciting and new and (of course) super tasty.
Today’s recipe combines some of our old favorites into one to make new flavors and a totally satisfying meal.
Remember when I shared the recipe for those Cauliflower Meatballs? Well, there is more than one way to put them to good use. Pasta is always a good call, but when you want something lighter, this salad will do the trick.
The best part is, the meatballs are a great freezer food. Make a big batch, store them in the freezer, then use them as needed. For this salad I lightly fried them in a tiny bit of oil until crispy on each side. Because these are prepped beforehand, this comes together quickly and easily.
And you all know about the Creamy Dreamy Green Sauce that acts as the dressing for this salad. It is an herby, avocado-based dressing that can be used in so many ways. I love it over my Spring Potato Salad, but it takes this salad from tasty to over the top.
To add some extra pop to this salad, I also added some red onion (can never get enough) and jalapeño slices (bring on the heat). But you can opt for any other salad toppings you like. Some options are tomatoes, pine nuts, crumbled almond cheese, croutons.
This is a perfect summer dinner when you want to spend very little time in the kitchen but want BIG flavors.

Vegan Meatball Salad with Creamy Dreamy Green Sauce
- 1 tsp olive oil
- 12 Cauliflower Meatballs*
- 1 head butter lettuce or greens of choice
- 1/2 red onion thinly sliced
- 1 jalapeño optional
- Creamy Dreamy Green Sauce**
- 1 lemon cut in wedges
- Heat olive oil in a pan over medium heat. Add frozen meatballs and cook until browned on all sides and warmed through (approx. 10 minutes).
- Chop lettuce, red onion and jalapeño and divide among 4 plates.
- Prepare Creamy Dreamy Green Sauce according to instructions.
- Top each salad with 3 meatballs and add dressing to taste. Serve with lemon wedges.
