Vegan Meatball Salad with Creamy Dreamy Green Sauce
Salads got a whole lot tastier with this Vegan Meatball Salad with Creamy Dreamy Green Sauce. Packed full of butter lettuce, cauliflower meatballs, red onions, jalapeños and the BEST green dressing.
Ingredients
- 1 tsp olive oil
- 12 Cauliflower Meatballs*
- 1 head butter lettuce or greens of choice
- 1/2 red onion thinly sliced
- 1 jalapeño optional
- Creamy Dreamy Green Sauce**
- 1 lemon cut in wedges
Instructions
- Heat olive oil in a pan over medium heat. Add frozen meatballs and cook until browned on all sides and warmed through (approx. 10 minutes).
- Chop lettuce, red onion and jalapeño and divide among 4 plates.
- Prepare Creamy Dreamy Green Sauce according to instructions.
- Top each salad with 3 meatballs and add dressing to taste. Serve with lemon wedges.
