You need a skillet.

steps
step 1: make the chipotle “beef”
This vegan “beef” is seriously so yummy. It can be used for so many different things – bowls, burritos & tacos!
Heat the oil in a skillet over medium heat. Add the onion, garlic and dry seasonings. Cook down for 3-5 minutes, or until the veggies start to get tender.
Add the vegan beef crumbles, chipotle pepper & adobo sauce. Cook for 10 minutes, or until the beef crumbles start to crisp up. Taste and adjust the seasonings as needed – if it gets too dry at any point, and 1-2 tablespoons of water to the skillet and keep cooking.

step 2: make the toppings
The vegan “beef” in this recipe is super flavorful. But you know me…any opportunity to add more flavor, I’ll take it.
One layer of flavor comes from the chipotle mayo. This sauce is great because you can add as much spice as you want by adjust the adobo sauce. So, just combine vegan mayo, adobo sauce (from the chipotle can) and some apple cider vinegar.
We’re also making a cilantro slaw – it is just cilantro, jalapeño, onion, oil, salt & pepper.

step 3: serve it up
Now, we just need to layer everything!

Add rice to each bowl (I like to use the microwave packs) and then top it with shredded lettuce, cabbage, chipotle beef, chipotle mayo and the cilantro slaw.
These bowls are uber delicious. You will want them on repeat every week!

tips & tricks
To make the chipotle mayo combine 1/4 cup vegan mayo, 1-2 teaspoons adobo sauce and a splash of apple cider vinegar.
Want to add more veggies? Cut up some bell pepper and add it to the skillet with the onion & garlic.
So many ways to change up the bowls – add avocado or salsa, switch up the greens with kale or spinach. Just use whatever you have on hand.
