Trader Joe’s Shiitake Soyaki Noodles

These Trader Joe’s Shiitake Soyaki Noodles are a one-pot dinner that is ready in just 25 minutes. Perfect weeknight dinner!

Skip take-out this weekend and make these Trader Joe’s Shiitake Soyaki Noodles instead! They are umami-packed, with the perfect amount of spice. Plus you can amp these up with more veggies and plant protein. Super versatile – and if you don’t have Trader Joe’s, no worries, I give you great swaps!
here’s what you need
ingredients
- oil
- shiitake mushrooms
- pepper
- garlic
- fresh ginger
- green onions
- Trader Joe’s Thai wheat noodles
- soyaki sauce
- sesame oil
- Trader Joe’s chili onion crunch

Grab your favorite skillet!

steps
step 1: cook the mushrooms
Let’s talk shrooms. Am I the biggest mushroom fan? No! But, if they are cooked the right way, I love them. And for me, the right way is giving them a nice char. I just hate a chewy mushroom.

So, remove the stems from the shiitakes and slice them.
Heat the oil in a skillet over medium high heat. Add the sliced mushrooms & a pinch of pepper and sear until browned on both sides.

step 2: stir-fry
Now that the shrooms are ready, we can bring everything else together.

Lower the heat to medium and add the garlic, ginger & whites of the green onions. Cook down for 1 minute.
Add in the noodles & soyaki sauce and toss until the noodles are cooked through and coated – add more soyaki sauce if needed.

step 3: finish & serve
To finish the noodles off top them with the remaining green onion, sesame oil and a drizzle of chili onion crunch.

These noodles are everything you could want in a bowl of noodles.
You get the perfect amount of spice & crunch in each bite!


tips & tricks
The noodles come in a pouch and are pretty stuck together. I like to gently loosen them up with my hands before adding them to the pan.
If you don’t have a Trader Joe’s, sub the noodles with fresh udon (or any other cooked noodle of your choice) and use any chili oil to finish.
Bulk this up with plant protein – stir-fry some tofu cubes before searing the mushrooms or add in some shelled edamame.

- 1/4 cup soyaki sauce plus more to taste
- 1 tablespoon sesame oil
