Back to school season means easy dinners are a must! And this Sheet Pan Soyaki Tofu is not only super easy, it is made on one sheet pan and is super healthy! The key to the tofu is letting it marinate for at least an hour. That lets the soyaki sauce seep into the tofu and get delicious from the inside out. The tofu is roasted with lots of veggies and then everything is served over rice. Simple, easy and delicious!

Step One: Marinate the Tofu

Like I said, marinating the tofu is key. It is why this tofu is extra tasty. And to keep this recipe extra easy, we are using a premade marinade.

I love soyaki sauce. It is basically a better version of soy sauce. At least when it comes to marinating things. You can find it at Trader Joe’s or similar versions at other grocery stores – look for the soy sauce with sesame seeds and some other ingredients in it.

After the tofu is drained & pressed, cut the tofu into 4 rectangles. Pour 1/4 cup of soyaki sauce in the bottom of a shallow dish. Place the tofu pieces in the marinade and then pour the remaining marinade over the tofu. Place in the fridge for 1 hour to marinate, flipping halfway.

Step Two: Bake

Line a baking sheet with parchment paper and preheat the oven.

Transfer the tofu slices to the baking sheet, being sure to let any excess marinade drip off. To the other side of the baking sheet add a head of chopped broccoli and some zucchini. This is where that leftover marinade comes in.

Drizzle 2-3 tablespoons of the leftover marinade over the veggies and toss. Place the baking sheet in the oven for 15 minutes. Remove from the oven, flip the tofu and spoon a little more marinade over it. Toss the veggies and place back in the oven for 10-15 minutes – or until the tofu & veggies are crispy.

Step Three: Serve

Once the tofu and veggies are nice and crispy, you can serve them up. I like to add rice to each plate and then top with the tofu and veggies.

When it comes to toppings, you know I wouldn’t leave you hanging. I topped mine with green onion, sesame seeds and some chili oil.

These tofu plates are great the night of and the leftovers are great for lunch the next day. You get everything you need in one meal and it’s all made on one baking sheet! Hello easy clean up!

Tips & Tricks

You will likely have leftover marinade at the end.

If you have an air fryer, I would recommend reheating the leftovers in it! Reheat at 370 for 5-7 minutes to crispy everything back up.

You can switch up the veggies depending on what you have on hand. I think that cauliflower, broccolini or carrots would be great too!

Ingredients

  • 1 14-ounce block extra firm tofu drained & pressed
  • 1/2 cup soyaki sauce
  • 1 head broccoli about 4 cups
  • 1 large zucchini
  • 2 cups cooked rice
  • green onion, sesame seeds, chili oil optional, for serving

  • After the tofu is drained & pressed, cut the tofu into 4 rectangles. Pour 1/4 cup of soyaki sauce in the bottom of a shallow dish. Place the tofu pieces in the marinade and then pour the remaining marinade over the tofu. Place in the fridge for 1 hour to marinate, flipping halfway.
  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  • Cut the broccoli into florets. Quarter the zucchini lengthwise and then cut in bite-sized pieces.
  • Place the tofu on one half of the baking sheet, letting the excess marinade drain off first. Add the veggies to the other half of the baking sheet. Drizzle 2-3 tablespoons of the leftover marinade over the veggies and toss.
  • Place in the oven for 15 minutes. Remove from the oven, flip the tofu and spoon a little more marinade over it. Toss the veggies and place back in the oven for 10-15 minutes – or until the tofu & veggies are crispy.
  • Remove from the oven. Add rice to each plate and top with the tofu & veggies. Serve with the optional toppings.
