Equipment

Ingredients

  • 2 tablespoons oil I used avocado oil
  • 4 ounces shiitake mushrooms stems removed and sliced
  • pepper to taste
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 3 green onions sliced, whites & greens separated
  • 2 packages Trader Joe's Thai wheat noodles see notes
  • 1/4 cup soyaki sauce plus more to taste
  • 1 tablespoon sesame oil
  • Trader Joe's chili onion crunch optional

Instructions

  • Heat the oil in a skillet over medium high heat. Add the sliced mushrooms & a pinch of pepper and sear until browned on both sides.
  • Lower the heat to medium and add the garlic, ginger & whites of the green onions. Cook down for 1 minute. Add in the noodles & soyaki sauce and toss until the noodles are cooked through and coated - add more soyaki sauce if needed.
  • To finish, top the noodles with the remaining green onion, sesame oil and a drizzle of chili onion crunch. Add to bowls and enjoy!

Notes

  • The noodles come in a pouch and are pretty stuck together. I like to gently loosen them up with my hands before adding them to the pan.
  • If you don't have a Trader Joe's, sub the noodles with fresh udon (or any other cooked noodle of your choice) and use any chili oil to finish.
  • Bulk this up with plant protein - stir-fry some tofu cubes before searing the mushrooms or add in some shelled edamame.
