This Simple Tomato Basil Gnocchi is a rustic, 30-minute vegan dinner recipe that everyone will enjoy. Simple, delicious & easy!

This Simple Tomato Basil Gnocchi is going to be on repeat all summer long! It is made with just 10 ingredients, in 30 minutes…doesn’t get much better than that! The sauce is super rustic – nothing fancy, just super tasty stuff going on here. This is sure to be a family favorite!
Step One: Make the Sauce
The sauce for this gnocchi is rustic and simple. And I mean simple…very little chopping and very few ingredients.

Here is what you need:
- olive oil
- shallot
- garlic
- sun-dried tomatoes
- tomato paste
- Italian seasoning
- salt & pepper
- fire roasted tomatoes
- fresh basil
Heat the olive oil in a skillet over medium heat. Add the shallot, garlic, sun-dried tomatoes, tomato paste, Italian seasoning and a pinch of salt & pepper. Cook down for a couple minutes, stirring frequently.
Pour in the tomatoes and bring to a boil. Once the sauce starts to bubble, lower the heat and simmer for 10 minutes. To finish off the sauce, add the fresh basil and give it a taste – you may need to add more salt or pepper.

Step Two: Boil the Gnocchi
A major reason I love cooking gnocchi in the summer, or anytime really, is that it takes basically no time to cook. We’re talking minutes. The water takes longer to boil.
You’ll know the gnocchi is done boiling when they start to float to the top. You don’t want to let them cook longer than that because you’ll end up with a mushy mess!
Drain the gnocchi once they are done and then it is time to assemble!

Step Three: Assemble & Serve
Add the drained gnocchi to the sauce and toss until everything is coated nicely. If you like a little spice, now is a great time to add some red pepper flakes!

I like to serve this right away while everything is still hot. You could sprinkle on some more fresh basil or some vegan parmesan, but I served mine as is.
There is so much flavor in this sauce! And the gnocchi is delicate and delicious. The perfect combo!

- 1 pound gnocchi
- 2 tablespoons olive oil

- While the water is heating up, heat the olive oil in a skillet over medium heat. Add the shallot, garlic, sun-dried tomatoes, tomato paste, Italian seasoning and a pinch of salt & pepper. Cook down for a couple minutes, stirring frequently. Pour in the tomatoes and bring to a boil. Once the sauce starts to bubble, lower the heat and simmer for 10 minutes.
- Once the water is boiling, add the gnocchi and cook until they float to the top – about 3 minutes. Drain the gnocchi.
- Add the basil to the sauce, taste it and adjust the seasonings as needed. Add the drained gnocchi to the sauce and toss to coat.
- Serve hot with red pepper flakes.
