This Simple Pinto Bean Salad is going to be your new favorite way to eat your beans & veggies. And let me tell you, we’re getting tons of veggies into this one! Drained & rinsed beans are tossed together with crunchy veggies and then everything is tossed in a chipotle lime dressing. You get crunch, smoke, and creaminess from the avocado. This can be served on its own, with chips or in tortillas!

Step One: Make the Chipotle Dressing

It seems a little silly to map out the instructions, because it is a pretty simple one…make the dressing, cut the veggies and toss. But here is a breakdown of the dressing:

  • avocado oil
  • garlic powder
  • onion powder
  • chipotle chili powder
  • smoked paprika
  • cumin
  • salt & pepper
  • limes

Add all of the dressing ingredients to the bottom of your salad bowl and whisk to combine.

Step Two: Chop, Chop, Chop

The majority of the work for this recipe comes from the chopping. So put on some music or your favorite podcast and get to work. For the salad we are prepping:

  • bell peppers 
  • red onion 
  • green onions 
  • tomatoes 
  • cilantro 
  • jalapeño 
  • avocados 

Feel free to switch up the veggies based on what you have on hand.

Step Three: Assemble & Serve

Add your drained and rinsed pinto beans to the salad bowl along with the veggies. Toss, toss, toss until everything is nicely coated. Give it a taste and adjust the seasonings as needed.

You can go ahead and eat this right away or pop it in the fridge to chill. The flavors meld together even more after it sits, so if you have the time, I recommend chilling it. If you are going to make it ahead of time, I would leave out the avocado until right before serving!

You can serve this as is as a side dish. Or have some tortilla chips on the side for dipping. Or heat up some tortillas and make some tacos. There is so much you can do with this salad!

  • Add the oil, dry seasonings, lime zest & lime juice to a large bowl and whisk to combine.
  • Add the rest of the ingredients and toss until coated. Taste and adjust the seasonings as needed. Chill in the fridge or serve immediately. Can be served with tortilla chips or tortillas.

  • If making ahead of time, I would leave the avocado out until right before serving.
