Mediterranean Pizza Pockets

These Mediterranean Pizza Pockets are filled with vegan feta, vegan parmesan, sun-dried tomatoes, herbs & garlic. The perfect vegan snack or kid-friendly dinner!

I am taking a childhood favorite and making it vegan! These Mediterranean Pizza Pockets are made with pre-made pizza dough that is filled with vegan feta, vegan parm, sun-dried tomatoes, herbs & garlic. Each piece of dough is pinched closed, brushed with vegan butter and cooked until golden. The pizza pockets are served hot with plenty of warm marinara on the side. These are crispy, cheesy and delicious.
Step One: Prep the Dough
Since we are using pre-made pizza dough, you will need to put it on the counter to come to room temperature for at least 30 minutes. This will allow you to stretch it into the right shape.
I like to add some flour to a clean countertop and let the dough sit. When it has come to room temp, slice it into 8 equal pieces. Roll each piece into a circle – they don’t have to be perfect, so don’t overthink it. You can either use your hands to roll it out or use a rolling pin.

Step Two: Make the Filling
The filling is what makes these little pizza pockets so delicious. Here is what you’ll need:
- vegan feta
- vegan parmesan
- sun-dried tomatoes in oil
- garlic
- fresh basil
- dried oregano
- salt & pepper
I get both of these vegan cheeses from Trader Joe’s – they have the best stuff! Add everything to a bowl and mix until combined.

Step Three: Fill ’em Up
Depending on the size of each piece of dough, you are going to add 1-2 tablespoons of filling to each one. Grab the two sides of the dough and pinch everything together – they should be shaped like a half circle.
Place the finished pizza pockets on a parchment-lined baking sheet. Use a fork to pinch down the edges and brush each one with some melted vegan butter. Give them a sprinkle of garlic powder, garlic salt & oregano and bake for 20 minutes.

Serve them Up
When the pizza pockets come out of the oven they should be brown and crispy on the top and super gooey in the center. If some of the cheese spills out while they are baking, no worries – those crispy bits are delicious!
I like to have some warm marinara on the side for dipping! You can play around with filling options or even serve them with some pesto on the side. Lots of options – these are sure to be a hit at your house.

Mediterranean Pizza Pockets
Ingredients
- 1 16-ounce package pizza dough
- flour for rolling out the dough
- 3 ounces vegan feta crumbled
- 2 tablespoons vegan parmesan
- 2 tablespoons sun-dried tomatoes in oil, roughly chopped
- 1 clove garlic finely minced
- 1 tablespoon fresh basil chopped
- 1 teaspoon dried oregano
- salt & pepper
- 1 tablespoon vegan butter melted
- garlic powder
- garlic salt
- marinara sauce

- Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
- Place the pizza dough on a lightly floured surface and allow to come to room temperature for 30 minutes.
- Combine the feta, parmesan, sun-dried tomatoes, garlic, basil, oregano and a pinch of salt & pepper in a bowl. Mix and set aside.
- Cut the dough into 8 equal pieces. Using your hands or a rolling pin, roll each piece of dough into a circle. Add 1-2 tablespoons of the filling to each piece of dough and fold over to create a half circle. Pinch the sides closed and place on the baking sheet.
- Use a fork to seal the edges of each pizza pocket. Brush with vegan butter and sprinkle a little garlic powder, garlic salt and oregano on each one. Place in the oven and bake for 20 minutes, or until golden brown.
- Remove from the oven and serve hot with warm marinara sauce.

Delicious and fun to make with kiddos! Let our 5 year old help roll and seal the dough. Easily customizable for everyone’s tastes. I used vegan shredded mozzarella instead of the parmesan just since I had it on hand. Loved the sundried tomatoes and fresh basil, and the seasoning on top of the melted butter really makes them yummy. Will definitely make again! Thank you for a great recipe!
