Quick tacos in the summer time are one of my favorite weeknight dinners. With a handful of simple ingredients and 20 minutes you have delicious tacos on your hands with these Chipotle “Steak” Tacos! The vegan steak is pan-fried until charred and then served up with an avocado salsa. The perfect bite!

here’s what you need

ingredients

  • oil
  • yellow onion
  • vegan “steak”
  • chipotle chili powder
  • garlic salt
  • cumin
  • pepper
  • salsa verde
  • avocados
  • yellow onion
  • cilantro
  • lime juice
  • corn tortillas

You need a skillet and a small blender (or food processor).

steps

step 1: cook the vegan steak

Heat the oil in a skillet. Add the vegan steak & dry seasonings. Toss to coat and spread in an even layer. Cook until browned on both sides. When the steak is almost done, add the salsa verde to the skillet and toss until combined.

step 2: prep the extras

While the vegan steak is cooking you are going to prep the avocado salsa and the onions & cilantro.

Add all of the salsa ingredients to a small blender or food processor and blend until smooth. Give it a taste and adjust the seasonings as needed.

And then chop up some onion, cilantro and limes. Add everything to a bowl and mix to combine.

step 3: serve

Before you do anything else, heat up your tortillas. I like to do this over an open flame, but you could also use a skillet.

Load up the tortillas with the salsa, “steak” and onions/cilantro.

You can sub vegan chicken or tofu for the steak!

  • Heat the oil in a skillet. Add the vegan steak & dry seasonings. Toss to coat and spread in an even layer. Cook until browned on both sides (approx. 3-5 minutes per side). When the steak is almost done, add 4 ounces of salsa verde to the skillet and toss until combined.
  • Meanwhile, add the remaining salsa verde to a small blender with the avocado. Blend on high until smooth and set aside.
  • Add the onion, cilantro & lime juice to a small bowl and toss to combine. Set aside.
  • Heat the tortillas over an open flame or in a skillet.
  • To assemble, add some avocado salsa to each tortilla. Top with the vegan steak and some onions & cilantro. Serve and enjoy!
